- Today I am cooking at home and making my Abuelita's enchiladas rojas or red enchiladas my grandmother's way. I will be using cheese and onion to fill these, but you can add shredded chicken or beef. The filling is versatile. You can also top with what you prefer.

This woman is, quite possibly, the greatest cook I've ever seen!
Thank you for such a wonderful receipe 🤗 and for a bit of your history im allways curious about people's harritage
Absolutely, easy to learn to pass on to your children!, thank you Maria!
I'm crying. My Abuelita made them like this. My sister and I were just talking about these as I was making your Salsa de Molcajete again. Thank you so much for bringing back my Grandma with each recipe. Sending you all so much Love. 💗
And your Abuelitos!!! !Que lindos!
You literally put a tear in my eyes. I've not seen anyone else besides my dear mama make enchiladas this way...she's long passed.
I've been to many restaurants hoping to find enchiladas made this way, but no luck. They all drown the enchiladas in sauce...thank you for sharing!😢
Me too!

My husband loves Mexican food. I never had a chance to be taught how to cook Mexican from my mother or family, they disowned me when I came out to them 35 yrs ago. After almost 30 yrs in Europe, I recently am rediscovering my heritage and culture and especially the food. You’re now my Mexican cooking mother and abuelita… I've become the only Mexican that serves this beautiful food while speaking French to my friends and new family here. Thank you for being there.
Im sorry they disowned you. Fuxk them
Now this!!!! This right here!!! This is how my mom used to make Enchiladas growing up!!! These are authentic Mexican Enchiladas!!!
Way cool enchiladas. Even cooler pix of your ancestors. One should value one's family history.
I had forgotten, my abuelita would fry the enchiladas the next day. I preferred day 2 enchiladas nice and crunchy. Thanks for the memories
Absolutely, the next best way to serve enchiladas, pan fried. I do them for breakfast. I place the fried enchiladas on a bed of shredded cheese. As they are melting that cheese I fry up two eggs over easy then I place them on top of the enchiladas; sided with refried beans and fried potatoes, breakfast is served 🤠🇺🇸
Yes

Lucky you❤️
I made these tonight for my family plus another batch for a bereaved coworker. They were delicious! Thank you so much for the tutorial. Growing up my parents didn't cook much but I learned as an adult that I love to cook, so I'm so grateful to people like you who generously make their wisdom available for others.
Nothing beats traditional food that has been passed on from generations
The story at the end was really touching 😊 thank u for sharing this recipe with us ❤
Nothing beats granny’s cooking ❤️❤️❤️❤️
These look amazing! Love the pictures of your grandparents in their younger years. So beautiful.
Thank You for sharing your precious grandparents with us!! The enchiladas look delicious!!
There's nothing like a grandmother's cooking! The time and love put into it comes through in every bite. I grew up with my grandmother also and I miss her every day.❤
Natalie, I feel the same way. It is such a shame that children grow up without grandparents, because the grandparents have more to offer children because they have so much experience and have learned their short comings in the process of raising children.
The best thing I have learned from this channel are the many variations of different salsas, enchiladas, burritos, tacos, etc. It gave me the freedom to put my own spin on these recipes, without fearing it might not be "authentic". My family thanks me, but really, we all thank you for sharing!
You are so blessed to have your grandparents still with you ❤
The photos are amazing! What a beautiful legacy.
We’ve made these so many times now I have it memorized. Thank you for this and all your videos. They’re so fun and easy for me to understand. We’ve made lots of your recipes and not a single failure so far.
Also the end where you visited your grandmother was so sweet!
Ahhh that was sweet. Thanks for sharing pictures of your grandparents. I lost mine at a very young age. That was nice to see.
My Grandma makes the same kind of Enchiladas, but she adds shredded precooked chicken with diced onions inside. Delish!!
I think learning how our grandparents prepared things is so important. We can learn so much about the culture. My grandmother did not enjoy cooking so there wasn't much to pass on but she gave me so much love that there isn't a void.
Thank you for sharing.
Thank you for sharing. I loved how you included about your grandparents and pictures of when they were younger. Thank you
Ever since I was a little girl, my mom would add ground beef as the filling and cheese as the topping. Then a friend of mine gave me a plate of hers with just cheese and onion and I was so shocked. My mom told me that the traditional enchiladas are only filled with cheese and onion. However, my moms family was so poor and couldn’t afford cheese so it was just onion and she grew to hate onions and stopped using them when she came to the US.
I dont like eating onions whatsoever but i use onions when i cook because its an important ingredient to make food taste good 😊
I notice white ppl use ground beef 🥴 cheese & onion 🧅 or chicken only 🖐🏽
@@RodriguezAby1 I can't eat onions, so I use shallots and scallions.
Tip: scrub guajjilo peppers under water that has a sprinkle of baking soda to wash off pesticides dirt and bacteria
Thank you.
I should do that with all veggies. Thank you for posting this.
You are so blessed to have pictures, stories, and recipes from your ancestors. That's amazing. Bless you. 😀
I love the gifts our grandmothers pass on to us ❤️ your family is full of beauty, good food and love. Bless you all ❤️

Thanks for the recipe and the beautiful mini story with your grandparents.... truly a blessing.
I know that's delicious! Your time with grandparents really is a treasure.
I love this version...I like to lightly toast my chilies first then just soak in boiled water, and also semi sweet chocolate added at the end makes the flavor so yummy and intense.Lovely demonstration of how to cook and fold the enchiladas, thanks for sharing!! I love the history and pics🤗.
Chocolate? How much ?
Us Hispanics use chocolate for mole and it’s delicious ! Great idea

Prayers for your very beautiful grandparents! Those enchiladas are the bomb! Congrats on the cookbook!
Thank you for sharing that sweet little glimpse of your family history. My hubby grew up on the north side. I grew up east. I joke that we’re the Capulets and the Montagues.

Thank you, thank you, thank you! I made these, and they were delicious! And so quick and easy. I had a delicious meal on the table in five minutes. No more soggy oven-baked enchiladas for me.

I have always struggled with these. I now realize I had the heat to high...I just need your patience and lower the heat. I love this style of enchiladas. I know it gets messy with the chile popping in the oil. Thank you for sharing your abuelito's pictures.
Same here girl lol that explains my stove splattered with red chile everywhere! 😂😂😂
My heat was too high before too!
Hi erica
Oh yummy .. and you have beautiful grandparents and great grandmother
I love that picture of your abuela. So pretty. Thank you for sharing your recipes and stories!
This is essentially how I cook my enchiladas as well. My MIL taught me using ancho chilles; I now combine guajillo(?) and ancho. I also fry a diced potato/carrot mixture to put on the finished product, fried in the same skillet the enchiladas were fried in.
I was taught using both, but I strain mine too
This is my first time making enchilada sauce omg it’s so delicious. I’m not making can sauce enchiladas sauce anymore. Thank you so much my family did notice the difference and loved your recipe
How precious. Enjoyed the video. It was special to see your grandparents. Blessings to all.
Wow! Thx for sharing your family recipes! And I thinks its so nice to see that you are collecting these memories! Priceless!
Awwwww I love the pic of you and your grandparents. It made me tear up. My grandparents raised me and I missed them so much. They passed 7 yrs apart. I love looking through pictures from back then. Also I was like "HEY THATS 610!!) LOL I'm from Alvin...South of Houston. Anyway love watching your videos. God bless you
I love the fact that you included your grandparents in this video. Great video!!!! I can't wait to make these.

This looks amazing, I never would've thought to dip the tortilla in salsa before frying, what a cool technique
regional cuisine, the different ways to prepare food go with the region. In the north of mexico, Zacatecas, Durango, Chihuahua, they fry the tortilla first and then dip it in the enchilada sauce after. The Chile rellenos in Durango never go with a salsa over them and use Poblano peppers all the time so a deviation from that is unusual to people from that region. Tamales are different in almost every state, sometimes from family to family. My aunt on my dad's side always made sweet tamales with pineapple, raisins, and coconut but my mom's side of the family didn't care for them or never made them. It's nice to have all of these different takes on the most of common Mexican dishes. I like all variations and like to try new ways and flavors, it's all good.
Beautiful family and God Bless your grandparents as well.
That's so nice. Good recipe and beautiful pics of your grandparents.
I have wanted an enchilada sauce made with guajillos and no tomatoes for years! Thank you!
Delicious food and family history is a great story to watch while on my lunch break. Also I'm a 4th year oncology resident here at Harborview in Seattle Washington and I thoroughly love watching your vids, I made the birreria tacos for my girlfriend and she loved them!
