Pato sauce 🦆 is a staple in my kitchen. I make fresh fried corn tortilla chips and lay them all across a flat tray, I pour that sauce over all the chips straight from the can, I add beans (refried in their own juice no oil/slightly runny, shredded cheese, chopped tomatoes, chopped green onions, and chopped black olives. Bake until the cheese melts and when it comes out you can add cilantro & avocado 🥑, I sometimes even add more heat with chopped jalapeños from a jar or any meat your want. This is one of the quickest Friday night meals that’s so fun and easy. I also use it for my Mexican rice. I use chicken broth (a tad under 2 cups) then I add just enough Pato sauce to create the full 2 cups of liquid and I cook the rice as usual. It’s so flavorful. I could go on and on with all the ways I use this sauce. Oh they also make the enchilada sauce in a bigger can. I use the can for potted plants 🪴 on my patio. My husband drills a hole at the bottom and they are so cute for herbs too. You should do a whole series on cooking with Pato sauce. Oh and the simple salsa too it’s a perfect base. 💕

These look great! Here in New Mexico we use chile colorado or chile caribe and there's a huge debate about whether enchiladas should be rolled or flat. I had never heard of entomatadas until a couple of years ago but I love the idea of busting out a can of El Pato for a quick meal. Around here, we love green chile chicken enchiladas as well. They aren't really enchiladas, but more of a 1950s style casserole with chile and tortillas. I don't know if they're a thing outside of New Mexico but if you haven't had them they're delicious! Great video. Usually I don't like videos using canned goods as to me it isn't cooking. But El Pato Sauce is just a necessary ingredient to me for Mexican cooking. I had to think back, but it was nearly 40 years ago and I was working with a cool Mexican man in a small business. He turned me on to El Pato sauce long before it was a thing that most people (especially old white guys) knew about. I use it for a lot of things. It is cheap too. (Although inflation is raising its price). I'll make some easy red rice (arroz rojo) just by sauteing some onions and using the El Pato Sauce to replace some of the water when making the rice. Easy and good.

I love Pato sauce! Thank you for sharing this!
My family has been using El Pato here in the Southwest since I was a kid. I’m 45 now so yeah, long time 😆. I always keep some on hand. It’s good by itself & I use it all the time as a base for a quick & easy salsa fresca for tacos, on eggs, with tortilla chips, etc..
I’m partial to the yellow can but the green one is great, too. I think the green one is just a tad hotter & I switch them up depending on my mood.
    Quick easy salsa:
1 7.75oz can of el pato sauce
1 10oz can rotel or store brand version is fine- mild, original or hot depending on YOUR heat preference.
    1 garlic clove
1/4 of a medium sized yellow, white or red onion-use less or more to your preference.
1/4 cup cilantro- can add more or leave out
Half of a fresh squeezed lime
1/2 tsp Badia Complete Seasoning or salt & pepper to taste.
Optional: add some fresh or roasted jalapeño/Serrano/your favorite chile to kick up the heat.
Throw everything in a food processor or blender and process to whatever consistency you like. Sometimes I like it thin, sometimes chunky. If I want it to be chunky then I’ll add in the rotel/diced tomatoes at the end after everything else has been blended and just pulse it a couple of times.
If it’s not spicy enough for you, you can add some fresh jalapeño, serrano, or whatever chile peppers you like 👍. Sometimes I’ll stir in some thinly sliced green onion or even some diced avocado. So many ways to switch this up and will taste better than any jar stuff imo 😁

When I use green onions I save two root white bottoms , put in a small shot glass or ounce type glass of water. This grows me constant chives as long as the water is kept in .

My favorite is cheese and onion also. I love all enchiladas but the sauce from fresh chilies and cheese not melted just is my most favorite. But I will eat any enchilada. I just made chili Verde with Anaheim and Serrano peppers and they were so good.

I have a ton of dehydrated Kale. It's actually very sweet and yummy with tons of flavor. I use it on everything. Try it. You will be surprised how good it is.
