    - 340g (12 oz) canned corned beef, chopped
    - 450g (1 lb) mashed potatoes
    - 1 Leek, finely chopped
    - 2 tablespoons fresh parsley, chopped
    - Salt and pepper, to taste
    - 1 Tbsp Paprika - optional to change the colour of the breadcrumbs
    - 2 eggs, beaten
    - Breadcrumbs for coating
    - Vegetable oil for frying
    - 1 teaspoon Worcestershire sauce - optional
    - 1 medium onion, finely chopped - Optional if not using a Leek

    Brings back memories. When I lived in Wales, we used to get rissoles and chips from the chip shop. My mother would ask why would we get a potato product with another potato product, but I loved them. So I will be making these for sure. Cheers Rik.

    I'm a Yankee girl so I never knew what rissoles were! Just another word for patties or cakes. I made something similar from a Bermuda cookbook that I got there (having eaten fish cakes everywhere I went) but they fell apart. The fridge tip is genius, same with adding a little flour. The Bermuda recipe didn't call for breading them but that would be delicious, I'm sure.

      I love. corned beef and potatoes.these Rissoles look so delicious. there is something about plain ingredients breaded and fried that makes a special treat. i wish there was a Welsh Chip Shop nearby. !! i would be a steady customer. Several years back there were H. Salt Esquire fish and chips stands that put a spray of malt vinegar on the chips. i have not seen one of them around for years. I never knew about a “chip shop” until i started watching Rik. its not just fish and chips., but corned beef and fish ‘cakes.’ and glamorgan sausages..so far..i can hardly wait for another Chip Shop specialty. I am deep fry challenged in my kitchen skills., but Rik makes it look do-able with the right equipment.

    In New Orleans we omit potatoes and sub fresh crab meat for the corned beef and it makes crab cakes.

    The perfect prepper food, by the way. Leeks and parsley are easy to grow and the rest is easily made, too. I used to make german Labskaus with corned-beef, or french bœuf Parmentier during the lockdowns and now I have a lovely welsh alternative. Thank you, Rik!

    Among my son's favourite food in the world is corned beef, potato and onion pie. Pie, patties, rissoles ( our market used to sell sage & onion ones.) They're all great, as someone has already commentated, we need them in a book.

    Not bad mate. This got me thinking about another old staple from my childhood. Pretty much identical but made with canned mackerel, egg, flour and a bit of cheese in the middle, served with chips, gravy and a slice of lemon.

    Had lamb rissoles yesterday, made from cold leftover roast lamb served on a bed of fluffy, creamy mash. Known in our house as Rissoles in the Snow - delicious!

    Dear Chef, omigosh! Honolulu people of a certain age may remember KC Drive In in Waikiki They had a deep fried corned beef hash patty sandwich. Delicious at 4 am after the clubs had closed, with french fries dipped in hot chinese mustard and shoyu and a lemon coke. Thank you for the memory! ❤😅

    As I keep saying, I think your cooking channel is the best on CZcams. I like the way you give us encouragement to make all these delicious meals. Also, I think it's great that you have kept your Yorkshire accent because it shows how sincere you are and that is a lot coming from a Lancashire lass. Anyway, now I have 'buttered you up' I want to make a few requests. 😀 How about making Branston Pickle (or Farmhouse Pickle) and any other kinds of chutneys. And about not being able to find suet, will butter do? Where I live, we have sheep's butter which is fatty like lard.     Rissoles appear to be the perfect way to use canned corned beef! In America, we see canned corned beef as corned beef hash and potatoes mostly prepared for breakfast. However, this recipe is a great idea and includes the potatoes, which absorb some of the salt, and leak within for any meal! Brilliant!

    I am 64years old and had not heard of this til last week. Made them last night and they were excellent. Only change was I deep fried rather than pan fried. Put the leftovers in the frig and heated up for lunch today, still crispy and great. Will be having again!

    Well Rik, I’ve made the rissoles for our dinner this evening. They were very tasty. I made double the amount so I can freeze for another day. Disappointed in my husband though…thanked me for dinner - which I’m happy with - but no mention of what he thought of the rissoles. I would have appreciated some feedback. I’m feeling slightly annoyed. He’s apologised saying he should have said something! After 47 years of marriage I just wonder when he might get it right 😳

    Our family is Welsh,my gran owned a fish and chip shop and used the leftover chips to make these for sale,at home she would make dozens of these(always round) and they were stored in the pantry on a meat plate.How would we eat them? We had them hot with potatoes and vegetables,cold with salad,for picnics,and our favourite sliced and into a sandwich!yum BTW never used were parsley(too posh)or flour or paprika our breadcrumbs were always of the bright orange kind and always deep fried yum yum yum.perhaps you should name them “Welsh style”

    I always like to have a few cans of corned beef in my cupboard . We make something similar with corned beef hash which has teeny tiny 1/2 cm diced potatoes in it. This is a great way to use leftover mashed potatoes! Have to use onions though as leeks are scarce and gourmet expensive around here. Thanks Rik.🎉

      Yes onions are usually found in the recipes. I actually have some cans here that are corned beef hash by a company called Pure Foods, San Miguel Foods. Small cubes of potato in. They make for fantastic quick pasties in puff pastry. Superb light meal. Best, Rik

    I remember these from the 1970's as a regular at our table. Still make them today, sadly canned corned beef is no longer as cheap but what is. Mum use to use smash instant potato to thicken the mix rather than add extra flour. To me the perfect meal of memory was the corned beef fritters, halved and fried tomatos from dad greenhouse and the cheap tesco straight cut chips with mayo for the chips and curry ketchup. Mayo chips where from when dad was stationed in germany, the curry ketchup was mums family recipe.
    Now i will add alsorts to spices to ours diced chilli's or add more onions and some chickpea flour with curry powder for a half arsed corned beef and onion bhaji.
    But when all is said and done the originals like mum made have the taste, texture and smell about them that brings memories of simpler times spent wiith family. Mind you i cann't get those premade bright neon orange breadcrumbs from tesco anymore.

    You could put this mixture into some dumpling skins and steam or fry them. They would be delicious. Eat dipped in chinese vinegar and soy sauce.❤❤❤❤❤❤

    Not exactly the same, but yes, mam taught me to make corned beef rissoles. I love the use of leeks, a much underrated veg in my opinion. Made leek & potato soup tonight but often use them as a veg. Being from the NE UK, we used leeks a lot, leek growing competitions etc. Mam taught me to make ‘leeks& cheese’. Sautéed leeks, a little water, slices of cheddar over the top until it melts. Serve with a buttered stottie 😊 I like adding some chopped up bacon to it too.

    Very tasty indeed. I made a variation, adding an egg ant 2 or 3 tablespoons of oatmeal. The result is a handy dough, which can easily be rolled into nice little meatloafs. The oatmeal makes it still "more Welsh".

    We always boiled onions in with the potato then drained and mashed together with the corned beef before breading and deep frying. (Sometimes a bit of thyme ). Lovely! This recipe is a nice alternative though, looks tasty. 🏴󠁧󠁢󠁷󠁬󠁳󠁿

      So easy to make,cut rounds of puff pastry.spoonful of mixed dried fruits mixed with brown sugar and cinnamon in the centre,wash the outer edge with water and form into a pouch,turn over and with a rolling pin roll to a round,brush with water and sprinkle with caster(or granulated) sugar.make three long slits on top not only does it let out the steam but is an integral part of the look enjoy

    My mom used to make these.I am not sure of the exact ingredients but they were an inexpensive meal .I am sure there are lots of variations. My partner would love these for breakfast as they are a shaped form of corned beef hash.I like the look of them verses the plop of corned beef hash.

      Wow! Thank you so much. I try to make sure anyone can make a meal or a recipe and have it on the table. Without any stress using ingredients most can get hold of. It's about putting a meal on the table without wasting someone's hard-earned money.     If you were worried about burning, and you wanted them hot could you perhaps cover with a small cube of butter/Margarine and pop them in the oven for 10 mins instead of shallow frying?

    Just found your channel, Rik. Love it! I’m from Newfoundland (rhymes with ‘understand’) and we used to call them ‘meat cakes’. Just dredged the patty in flour before frying. Love this version. Will definitely try it. Had heard the term rissoles on lots of britcoms but honestly didn’t know what it was until now. Cheers mate!

I can make them properly now Mine fell apart on me some time ago, you done a fantastic job there ,I will be making those next week. and your right they are bright yellow in our chip shops, my grandfather made lovely ones, and sometimes put left over meat from the sunday roast in them.       Put only a little flour in; just enough, and the double dip sorts most out. It seals with the egg. For home cooking, too, I would recommend shallow fry (not a shallow, deep fry, i.e., a lot of oil in the pan). It doesn't need it - the content is cooked - I kept trying to stress that it's all cooked on the video. We are warming and cooking the outside. Good luck, mate. @@allenbrown8158

    We call them corned beef patties in newcastle, you usually get them deep fried at a chippy.

    Never heard of these. Leek, potatoes, beef...brilliant! Those look like I would eat to many :) I bet they would freeze well pre- frying...grab 4 or 6 out of the big freezer bag and cook later on. Another good one, thanks Rik.

    If you need some more suggestions, I'm a sucker for anything with dried fruit. I don't think I've seen a video of anyone making Chorley Cakes or Eccles Cakes and I love vanilla slices too.

    I used to eat these regularly as a kid and I still make them now and love them. I always thought it was a recipe that my mam made up or read in woman’s weekly hahaha, never thought it was a real recipe. Made slightly diff in that I’ve only had them with onion and a small amount of sage in them, absolutely gorgeous. Fried well done, with garden peas and ketchup lol.
    Keep the site up, you seem to be soo g loads of recipes I remember as kid or still do now- great stuff.

    That does look good. I never had any of that with my wife's Cymraeg family. Welsh tea cakes (couldn't get real currants, so the Zante raisins had to do) and meat pasties... sure...but these look good.

    I have made these loads of times. I made about 20 once, and put them in the fridge. The girlfriends kids at them all in 2 days. They really do taste loads better than you imagine. I made mine with onions though. Leeks would actually be better l think. And really cheap to make.
