How to make the pumpkin bread!

    【dough】
    ・strong flour 200g(7oz)
    ・Sugar 30g(1oz)
    ・Salt 4g(0,14oz)
    ・Dry yeast 4g (0.14oz)
    ・Milk (40℃) 130 ml(4.39fl oz)
    ・Pumpkin 130g(4.58oz)
    ・Unsalted butter 30g (1.05oz)
    【cream】
    ・Pumpkin 250g(8.8oz)
    ・heavy cream 200ml(6.76fl oz)
    ・sugar 2 tablespoons
    ・cinnamon powder 1/2 teaspoon
    ・Pumpkin seeds 8 seeds
    How to make
    ※Bring unsalted butter to room temperature.
    Peel the pumpkin and remove the seeds.
    Dust the taco threads with flour.
    1.Cut the pumpkin for the dough into bite-sized pieces, place in a heatproof bowl, cover with plastic wrap, and microwave in a 500W microwave oven for about 5 minutes until softened, mash with a fork while hot, and remove from heat.
    2.In a bowl, combine all dough ingredients except unsalted butter and pumpkin in this order. When thoroughly mixed, remove from the bowl and knead.When the mixture is no longer powdery, add 1 and knead further.
    3.After kneading until the dough comes together, mix in unsalted butter and knead until the surface becomes smooth.
    4.Place in a bowl, cover with plastic wrap, and ferment at 40°C for 30 minutes using the fermentation function of the oven until doubled in size. (primary fermentation)
    5.Make the pumpkin cream. Cut the pumpkin for the pumpkin cream into bite-sized pieces, place in a heatproof bowl, and microwave in a 500W microwave oven until softened, about 5 minutes.
    6.In a food processor, combine 5, cream, and sugar and stir. When smooth, place in a saucepan.
    7.Knead over low heat until a paste forms, then add cinnamon powder, stir, remove from heat.
    8.Release the gas in 4, divide into 8 equal pieces, and roll, cover with a wet cloth and let rest for 10 minutes.
    9.Unroll the dough into a circle and wrap it with the 7. Loosely wrap the octopus threads, crossing them at the closure.
    10.Tie a knot at the closure and cut the thread. Place the dough, knot side down, on a baking sheet lined with a cookie sheet and cover with plastic wrap and a wet cloth.
    11.Ferment at 40°C for 10 minutes using the fermentation function of the oven, then ferment at room temperature for 10 minutes. (In the meantime, preheat the oven to 170°C.
    12.Bake in a 170°C oven for 10 minutes, then lower the temperature to 160°C for 10 minutes.
    13.Remove the threads and decorate with pumpkin seeds.
