    I'm very very happy you're discussing this. I've seen your post on flour and fat. I just love your detailed explanations of ingredients and their functions.     I love all this “science talk” about bread making and the next time I’m making some bread I’m going to do my own little experiment; adding protein powder into the mix. No idea what will happen, but figured it would be interesting.

    Very informative! I now have a much better understanding of how eggs will affect my bread recipes. I am inspired to do some experiments with brioche to see how different egg content will affect the taste and texture.
    BTW … your yudane burger buns were a great hit with my family😊

      Sounds great! Brioche is quite a challenge to get it right, different people may have different level of "tolerance" to the high level of sugar, butter and milk, now add lots of eggs to that list of enriched ingredients :)
      Our burger buns have passed another test 😎

    I wonder if pasture raised eggs vs store bought would bring any differences 🤔 . Cuz I can tell you, our homegrown eggs can’t be compared to ones at the store 😉
    For those of us who just want to make bread for our kiddos, can you give us the overall verdict (never made it through chemistry 😬). Thanks beautiful lady!
