    Germans didn't bring the flavor to TX. Just some cooking techniques. The flavor goes to the former slaves. Everybody in the BBQ world knows the slaves mastered the BBQ.

      No, the way of smoking is European combined with the native way (Mexico has its own bbq style) and the sauces come from the variety of food/produce (French/Spanish/British) coming through the Louisiana and Mississippi Delta (mustard, molasses, tomatoes, sugar, etc). Also, specifically the closed pit barbecue style is specifically western, not open pit which was part of colonial and southern style.
