Banana Cake with Banana Frosting and Chocolate Drizzle

- Banana Cake
Ingredients:
1 ½ cups oat flour
½ cup almond flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
3 ripe, leopard-spotted bananas
½ cup maple syrup
1 tablespoon vanilla
1 tablespoon apple cider vinegar
Instructions:
In a mixing bowl, combine the flours, baking powder, baking soda and spices. In a separate bowl mix the bananas, maple syrup, vanilla and vinegar. Stir and smoosh until well combined. Pour the liquid ingredients into the dry ingredient and stir well. Add to a parchment paper lined pan (9x9 -inch works well). Bake at 400 for 30minutes or until the center of the cake is baked and not liquid-y.
Cool and frost with Banana Frosting and Chocolate Drizzle, below.
Banana Frosting with Chocolate Drizzle
Ingredients:
1 block SILKEN firm tofu, well pressed or wrapped in kitchen clothes overnight.
1 ripe, leopard-spotted banana
1/3 cup maple syrup
1 teaspoon vanilla
¼ cup Enjoy Life chocolate chips
Instructions:
To a food-processor or high speed blender, add the tofu, banana, maple syrup and vanilla. Blend until smooth with no visible chunks.
Frost cake with Banana Frosting then add chocolate drizzle, if desired
In a small microwave-safe bowl, add chocolate chip and 1 teaspoon water. Microwave until the chips look melty - stir and stir until the melted chocolate is shiny and smooth. Use a spoon to drizzle lines of chocolate over the Banana Frosting.

Thanks for this recipe! I made it today because I had everything; bananas I needed to use, silken tofu and even Enjoy Life chocolate chips. It turned out great! I didn’t let the silken tofu drain long enough so I compensated by only putting 1 tablespoon of maple syrup in the frosting. It tasted sweet enough for me and was really good! I also cut the maple syrup in the cake by half and that was also plenty sweet (for me, I know people like different levels of sweet). The chocolate drizzle was a fantastic addition to this cake!

You can try adding an extra banana instead of maple syrup. My mom has diabetes and she just doesn’t add maple syrup and it’s okay for her.

That is YOUR perspective and YOUR opinion coming from your family background. I see two loving funny women who adore one another. Adoration is not being obedient or quiet, it's being able to be yourself in front of friends and family without fear of backlash.
Seems so bossy and overbearing. Who cares if the friggin frosting goes to the edges? She asked her to do it, so let her do it. And why does she have to rush her along all the time and jerk stuff out of her hands.

I do see what you are talking about but do not think it is meant to be disrespectful. I think they have such a good relationship and can talk to each other like real life and not be offended by each other. I love watching them; they are a hoot.
