    I have not been able to find Japanese white yam. How can I make this recipe without it? Thank you

      Japanese white yam (Nagaimo) helps the dough becomes fluffy after cooking. If you don't have it and want to add something else as the substitute, it is good to try Tofu. Just adding 100g(3.5 oz) of Tofu in the dough. But okonomiyaki withought nagaimo is still tasty to me and I think you can enjoy the one too:)

    What is dashi? Is that broth? Or chicken stock

      Yes, dashi means broth and it is usually broth out of dried bonito frakes or/and kombu kelp in Japan. I posted a video on how to make dashi, please check it out. Thank you for watching!
