    At the crux of the Georgian cuisine is the right combination of fresh herbs and spices. Many of these special spices date back to early trade and transport along the Silk Road, from which the Georgians derive a distinct Mediterranean flavor. Individual home cooks will vary the proportion of spices to main ingredients to suit their personal tastes. Three main spices in Georgia are coriander (kindzi), blue fenugreek (utskho suneli) and kindzi (coriander), and marigold (kviteli kvavili or Imeretian saffron).     I am from India and was so pleasantly surprised when I went to Georgia as the food was so flavorful and use of so many spices... absolutely love the country its people and food

    I am in California. Since Trader Joe's has been carrying Ajika spice, I have been buying and adding to a lot of different foods! It is my favorite spice blend.

    1) what’s in your preferred version of svanetian salt & with what ratios?
    2) which extra herbs do you add to khmeli suneli (in addition to the three main ones) for which kind of dishes, specifically (and why)?
    3) what’s your preferred spice mixture for mushrooms?

      Jordan, thanks a lot for watching and liking the videos. Here are the answers: 1) my preferred version of svanetian salt is one from svaneti region, in which the Svans add gitsruli or caraway seeds. The ratio of salt to spices is approximately 1:1. E.g. for 6 teaspoons of salt you will need about 6 teaspoons of spices: 1.5 teaspoons coriander, 1.5 teaspoon blue Fenugreek ( utskho Suneli), 1.5 teaspoon marigold, 1 teaspoon dried red chili pepper ( or to taste) or use flakes but grind them, 1/2 teaspoon caraway seeds plus garlic 3-4 cloves minced. 2) I add ground summer savory, dill, parsley, chili powder, bay leaf, basil, mint, especially for kharcho dish or stews as this mix of spices add great flavor. . 3) for mushrooms I mostly use fresh herbs but dried tarragon, coriander or summer savory would work well.

    What instrument is this in the beginning? Is it some kind of bagpipe?
    Wow. I want to make this food, but so many spices. I thought I had a lot of spices, I have so many Indian spices, and regular fenugreek and sumac right in my spice drawer, but this is a new world.

      It’s Georgian instrument. You can get khmeli Suneli spice blend from Amazon, it has all three core spices in it. Spices are available online, in Russian & Eastern European shops. There is a shopping list in Spices video. Thanks for watching!

      @@simplyme8593 cooking method and spices are different e.g. in Satsivi you use cinnamon, some cloves, and no tomato paste and very small amount of water or vinigar while kharcho is a soup and spice-walnut mix is added in broth

    It looks like I bought the Calendula variety of Marigold..! Is it very different from the "Tagetes patula" Marigold?

      Yes it’s, calendula may have sharp flavor. Marigold has very earthy almost sweet taste. Try a little and see if you like a taste.

      @@GeorgianCuisineatTamadasTable My very first spinach Phkali are in the fridge as we speak! We'll see tonight how they taste. During cooking it tasted great, but I want to stay close to the original ingredients. In the meantime I'll keep looking for the correct spice.

    Is classic "yellow" fenugreek absolutely different and would ruin the preparation if put in place of blue fenugreek? In Spain I have been able to find only the classic fenugreek so far.

      It’s different but of course you can try. Blue Fenugreek is milder. You can find it online, often under Utskho Suneli Blue Fenugreek name.

      I have NOT found them interchangeable, and have ruined a dish using common fenugreek, which is overpowering except in tiny amounts!

      Coriander spice is typically dried seeds of fresh coriander or cilantro as it’s called in North America. When fresh coriander is flowering then it has seeds.

    Here in Warsaw we have dried adzika available in georgian bakeries together with svaneti salt.
    Adzika is GREAT for meat dishes but works whenever you need spice something like with peper. Once I had 1kg of cream and I've been eating spaghetti with adzika+cream for 3weeks (spicy and red coloured already) :D
    So far best one was in kupdari.
    Nachvamdis
