The Best Pound Cake Recipe!

    A simple classic, this really is the best pound cake recipe! While pound cake has traditionally been made with a pound each of butter, sugar, eggs, and flour, I've made some small adjustments for the best flavor (hello, vanilla!) and the most perfect dense but soft crumb that's not dry or crumbly.
    Ingredients
    2 cups unsalted butter softened (455g)
    3 1/2 cups granulated sugar (700g)
    6 large whole eggs
    6 large egg yolks (these 6 egg yolks are in addition to the 6 whole eggs listed above).
    1 Tablespoon vanilla extract
    1 teaspoon salt
    3 1/2 cups all-purpose flour (438g)
    Instructions
    00:00 Introduction
    Preheat your oven to 350F (175C) and generously grease (with shortening) and flour a 10 inch tube pan or 12 cup bundt pan. Shake out excess flour and set aside.
    00:37 Place your butter in a large bowl (this recipe makes a lot of batter! I recommend using a stand mixer if you have one) and use an electric mixer to beat the butter until it is creamy and smooth.
    01:25 Scrape down the sides of the bowl and add the sugar. Beat until the ingredients are well combined and light and fluffy (about 1-2 minutes).
    02:09 In a separate, medium-sized bowl, combine your eggs, additional egg yolks, vanilla extract, and salt.Use a fork to lightly beat the eggs and yolks until all egg yolks are broken up and salt and vanilla are incorporated.With mixer on low speed, slowly pour egg mixture into your batter, allowing it to gradually become incorporated (don't pour all the egg mixture in at once, if you can't manage a steady stream then add the egg mixture in about 6 parts, allowing each part to become well incorporated before adding more). Once all of the egg mixture is incorporated, pause to scrape down the sides and bottom of the bowl, then increase speed to medium-high and beat for another 1-2 minutes.
    03:52 Reduce mixer speed to low and gradually, about 1/4 cup at a time, add flour to the batter until all has been added.Scrape down the sides and bottom of bowl and stir again on medium speed until well-combined and beat for another minute.
    04:41 Spread batter evenly into prepared tube pan, use a spatula to smooth the surface of the batter.
    Transfer to 350F (175C) oven and bake for an hour and ten to an hour and fifteen minutes or until a wooden skewer inserted in the center of the thickest part of the cake comes out clean or ideally with a few moist crumbs (do NOT over-bake this cake or it will be dry).
    Allow cake to cool for at least 20 minutes then run a knife around the sides of the tube pan and the center.
    Carefully invert pound cake onto a cooling rack and allow to cool completely before serving.

      I've baked so many pound cakes but the million dollar pound cake and yours I tried is my favorite. Both has a pound of butter I love a buttery pound cake. I've seen recipes where they use 2 sticks of butter 1/2 cup crisco. I love butter and sugar. Thanks for sharing

    This is a delicious pound cake! Very simple ingredients and easy to make. Used a bundt pan and turned out beautiful. Also used a long
    wooden skewer as recommended to make sure the cake was done. The whole family loved it!

    Just made this (in 3 bread pans rather than a tube pan) and it turned out absolutely amazing!! The top was browning a little too fast so I covered with foil for a while, but the bread was a great hit with my family!! Thank you

    This recipe is amazing! I struggled with adjusting the baking time because I didn’t have a tube pan or a Bundt cake pan. Had to use two different loaf pans so it cooked differently and my oven temperature isn’t always accurate. I had to keep a close eye on the cake while it was cooking and the end result Is pretty satisfying! I understand there’s a lot of variables when it comes to baking so thank you for sharing this wonderful recipe!

    I wanted to make a pound cake today so I looked up the recipe last night and the pictures look good, so I tried it. I must say this is the best cake or poundcake I’ve ever made. I see comments where people said it’s too eggy, either you didn’t mix it properly or you put more than the six eggs required. It is also an easy recipe to remember thanks so much....so good

    I searched CZcams for several pound cake recipes and I decided yesterday to give this a try. I wanted an old fashioned heavy pound cake. I followed your instructions but I batter ended up slightly thicker. During the baking process, the top of the cake was a little hard but I absolutely love everything about it. It taste so good.     Great recipe! A word of advice for anyone making this (or any) pound cake: because pound cakes typically have little or no Ieavening agent (and this recipe actually has none), there isn’t any air bubbles being introduced into the mixture by leavening--only through creaming the butter/sugar together. So, it is crucial to cream the butter and sugar until it is *very* fluffy and changes color to a very pale yellow (although not quite totally white) in order to create enough air--otherwise the end result after baking will be a texture that is too dense, even for a pound cake (almost gummy). So…cream, cream, cream!!!

    ❤❤THIS RECIPE !!! Made this last nite! It came out beautifully. Dense, yet moist, not dry at all. Definitely careful of oven temps.
    However, I don't have a traditional tube pan like Sam's. BUT.. with my big bundt pan and loaf pan..the batter was used😂!!
    It is REALLY A lot of batter which is always good. This Batter is enough for 2 BUNDT PANS.

      @@SugarSpunRun ok, the cake came out looking beautiful, it just tasted a little eggy. The texture was a real down south, textured pound cake. I think the extra egg yolks did it. I love and recommend this pound cake.. caution it makes a lot of batter..... I see negative comments, I made this cake" if I said it taste a little eggy, it's more than likely an error on my skillset in the kitchen. " nothing is at fault of mrs. Sugar spun.
      Can I use less eggs and still have the same wonderful results..? And thank you...

    I’m hoping this recipe helps me go from using a cake mix to baking my chocolate chip pound cake from scratch. I typically use a butter golden cake mix and also add in a box of instant vanilla pudding.

      I haven’t tried it, but it’s a thick batter so the chips should stay suspended in it. This recipe does make a lot of batter so if you need to I would discard a little bit of the batter so your pan doesn’t overflow. 🙂

    This was my first try at baking about 3 months ago. Each time it is delicious. I simply love the crunch ; however, my top gets too brown. Should I lower the temperature?

      It may need to come out of the oven a few minutes sooner, or it is possible your oven is running a little bit hotter than it says it is. I hope this helps. I'm glad you are still enjoying it. :)

    I wonder if you can use the water bath technique to help keep the oven from being to dry to help keep the cake kind of moist (what I mean is help it keep it a bit more moist not saying that it's dry or anything).

    Can the eggs be added two at a time instead of mixing them all together?

      It would probably work, but for best results I recommend doing it this way, it allows the ingredients to be combined better (including the vanilla and salt which is whisked in with the eggs).

      Unfortunately without having tried it I wouldn’t be able to give a suggestion here. There would be some pretty major changes to the cake to account for all of the extra moisture.

    I have no idea what happened to mine. It was wayyy to sweet. And I baked it for 75 minutes and when I cut it, it was undercooked a bit. And to make things worse, it rose but when I cut it, there was air between the cake and the top. Almost like air space between the cake and the top of the cake. Hard to explain. It was a disaster and I have no clue why.

    Can you please tell me the recipe for lesser amount .. means like 1 cup or 1 and 1/2 cup all purpose flour.

      You would have to divide all of the ingredients by 3 and then you’d need a much smaller pan and I’m not sure what the baking time would be on that.

    I just put it in the oven Hopefully it comes out good. Batter was a little hard. I didnt miss a step so not sure why.

      @@SugarSpunRun came out a little dry since I used a metal baking pan.but it taste amazing. Baked for 1H 10minutes the center was still raw thanks so much

      This is based off of a traditional recipe for a nice dense cake. Baking powder would make it lighter and that’s not the goal of this cake. 😊

      I have not tried it myself, but as long as you wrap it tightly and store in an air tight container it shouldn’t dry out.

    I've made pound cakes before but they barely rise and always come out too wet in the middle. I perform the doneness test and calibrate the oven and cream the sugar until fluffy. I just don't why the cake comes out buttery wet in the middle. Can you help?

      You may need a longer skewer to test the very center of the cake it still sounds underdone. 😊

      I don’t recommend it. Self rising flour contains salt and baking powder and you don’t need baking powder in this recipe. 😊

    I used only one egg, then weighed the egg and used the weigh of the egg as the measurements of the other ingredients and it turned out as a great mug cake
