Chantilly Cake: Moist Vanilla Cake with a Light Frosting and Juicy Berry Jam Filling!

- Today I’m so excited to be sharing my version of the well-loved Chantilly Cake! Start with a super soft, from-scratch vanilla cake, fill it with a (quick & easy) fresh homemade jam and finish everything off with an incredible whipped cream cheese/mascarpone frosting!

Ingredients
Cake Layers
2 ⅔ cups all-purpose flour (333g)
1 ½ cups granulated sugar (300g)
½ cup light brown sugar, firmly packed (100g)
½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
12 Tablespoons unsalted butter, softened and cut into 12 pieces (170g)
1 ½ cups buttermilk, room temperature preferred
2 large eggs, room temperature preferred
1 Tablespoon vanilla extract
Berry Filling (see note 1 if you would like to use fresh berries only rather than jam)
⅓ cup granulated sugar (65g)
3 Tablespoons cornstarch (23g)
3 cups/12 oz fresh or frozen mixed berries. I used a blend of strawberries, raspberries, and blackberries. (340g)
3 Tablespoons water
1 ½ Tablespoons lemon juice
Chantilly Cream Frosting
2 ½ cups heavy cream or heavy whipping cream (590ml)
2 cup powdered sugar, divided (250g)
2 teaspoons vanilla extract
8 oz cream cheese, softened (226g)
8 oz mascarpone, softened at room temperature for 15-20 minutes (226g)
Additional fresh fruit, for decorating the cake (if desired). I used fresh berries.

@@SugarSpunRun I'd love to hear the back story on the lonely mixer. My guess is, you already had a stand mixer (the gloss cinnamon one), but you really, REALLY wanted a turquoise one! Your husband ends up buying you the turquoise one but you never use it because it looks so cute in the counter behind you. So assuming your husband is your cameraman, he tries to make you feel guilty by zooming in on the lonely turquoise mixer. I could totally see that happening with my husband and me! Lol!

@Smart Blonde 🤣This is actually an incredibly close guess! I've had the single red/maroon looking one since we got married several years back. I always told him I needed to have a second one to be more efficient. He complained about no space in the kitchen and stuff on the counters and all that good stuff so I never got a second one. One Christmas he surprised me with the blue one. It does get used frequently when we aren't filming, but it looks so good in the background. A lot of viewers were asking me why I never used it so I began to point out the fact that it's never used and most people seem to really enjoy it. Although I could totally see my husband doing this just to make me feel bad. 🤣

I am so grateful to have found someone that uses the reverse creaming method. It is so much easier in my opinion and personally, I prefer a cake that's a bit denser. They are definitely sturdier, too.
It works pretty well for a lot of my cakes for sure. 😊

If you want to make this recipe i advice yall to reduce the sugar, i was a bit shocked when i read 300gr granulated and 100gr light packed brown sugar so i reduced the brown sugar by 50gr and my cake still turned out too sweet. But the texture was so soft and moist

Made this for my husbands birthday and it was a huge hit! I really love the reverse creaming technique. This is the second cake recipe of yours I’ve made using this method and both were amazing. Made the chantilly cake two nights ago and it is still moist and delicious. Your icing sounds fantastic, but I opted for a lovely buttercream icing this time. It worked perfectly with it.

This is the second Sugar Spun recipe that I have made and the first cake I have ever made from scratch (cheesecake notwithstanding). It turned out great! A combination of very delicate, yet heavy cake. Light frosting that the Mascarpone becomes the main flavor. And a not-sickly-sweet homemade jam all come together very well! Thumbs up!
