    Hi Lucie, Over fifty years ago I was an English girl new to Sri Lanka too, getting used to a new country, met a fantastic family there who became actual family for me, and learned to cook not from my partner but his mum who taught me to speak Sinhala too, so this really brought back some great memories. I don’t think I ever learned to husk a coconut, though I did a lot of other things, like pounding and using a grind stone, and winnowing rice. And learned to make dozens of curries and breakfast foods too…. Still love rice and curry! Am impressed that you cook on an open fire, they scared the life out of me! My lovely teacher was brilliant with them. Maybe you could get your partner to rig your coconut scraper onto a table top, it’s hard to do things at floor level if you didn’t do it that way as a child. The thought of pols curry made my mouth water! All the best to both.

    Hi Lucie, try putting oil into you pot first, heat a little then add chopped onion, fry till translucent and just turning a little golden in color, then add your spices then your jackfruit. It's a method for most curries. Will be tastier because you've braized your onions first - adds loads of flavor.

    For a good polos curry, it needs long simmering. The final product is dark (due to roasted curry powder and goraka); inside of the melted polos is pinkish brown. The taste is unbeliveable.

    You will be a very competent cook for SriLankan meals very soon Lucie. I still do not know how to husk a coconut. So you’ve achieved so much within such short span! 👏🏻👏🏻👏🏻👏🏻
    I usually add spinach to my dhal curry after it’s cooked. Once the dhal is made, and the fire is off, I add the spinach and cover the pan with the lid.
    That way the spinach retains its goodness better than being cooked as a curry. I’m sure your curry may have been delicious too.

    You can cook lentills and spinach together too. And a little older jack fruit is good cooked with coconut milk and its yummy.

    I wonder how this lady managed herself for the lack of facilities and spread happiness always..my husband is also a foreigner. although he loves srilanka lot, he can't stay here 3months without moving back or traveling overseas. really appreciate you are such a wonderful person. love to see more and more your great videos.

    Baby jack fruits are called polos, mature fruit is called herali and the sweet ripe fruit is called varaka if it is the some-what stiff variety or vala if it is the soggy variety. Both are very sweet when ripe, starcy and grainy when boiled when mature, soft grainy and tender when cooked very young. Delicious at all stages and the mature seeds taste like chestnuts. When roasted or cooled.

      Looking at you go at coconut. I do not regret getting canned coconut milk. I know they are not as good. But I got stuck with scraping coconut all the time growing up and I always hated it 🤣.

    Cut the two edges of the coconut away, then cut some marks, on the coconut. Then the cover gets loosened and becomes easy to husk it.

    That was a lot of hard work to crack open the coconuts and to make the coconut milk instead of just buying cans at a supermarket but I guess it tastes better and it is free off your own land which is amazing. The food looked awesome. Made me hungry 😛

    Clay pots, have to be washed with no soap, because soap will abaorb into the clay : but with firewood ash, salt, vinegar, turmeric, tambourine, goraka : that's one of these.hot water, normal water.

    When chilli fry use salted water ,chilli add salted water and leve one hour or more then fry some times we add chilli in to salted water bottle use it after many days.

    Ohhhhh thank god u posted a new vedio.....i am taking advanced level exams these days...and it makes my stresses go over the top to a level i can not bear ..so am riding a roller coaster of emotions these days ..and eventually burst them into tears😢 .but watching your vedios somehow makes me soooo relaxed...i dnt know how...but...it really seems to be helping to wipe up all worries...As am a girl with depression issues... i cant endure so much burden at a time..so i watched your latest vedios again and again...cuz it really helped me..you two...i dnt know how to say that .you guys have an amazing chemistry that really marries so well together.......the way you see life although you twoo guys also going through many and many hard times is really

    Ohhh by the way my dear sis...you should add salt at last after like finishing the whole cooking process....the reason is...the iodine in salt is gonna get destroyed if it caught lot of heat...things that cintains vitamins and minerals...should be added at last bcz of that reason...btw you did and amazing job and am sooo proud of you....💜️.

    sis, husk of coconut has a strong dark colourant that cannot be washed away ones it is on your cloth... keep that in mind when dealing with coconut. lahiru may call it kahata 😃

    Licie there are coconut scrapers you can attach to table top so you can easily stand n scrape or buy a coconut scraper with bench so you can sit down n scrape

    the jackfruit latex can be cleaned off easily using vegetable oil , or cover hands and utensils with oil and its hard for the latex to stick too

    Well done Lucie all the dishes look delicious.
    When the jackfruit is baby stage it’s called Polos. It’s nutty flavour when it’s cook , you can cook the big jackfruit before it ripe that’s the jackfruit curry ‘ kos curry’ which is more creamy in taste

    Be aware about the stain from coconut skin and also from jackfruit stain..it's hard to get rif of the stain .if it touches with clothes

    thats quite a cooking show! 😁😁 I super enjoyed to seeing your coooking, specially the prepwork of getting coconut dehusking. Usually no any sri lankan woman can do that but on your second attempt you nailed it🤛. Love goes to both you and lahiru! also get it little ergonomically improved your coconut scraper by fixing it to a table of desk so you dont need to stay at crawling stance for coconut scraping. 😍

    You can also cook white jackfruit curry (Kos curry) with slightly ripe jackfruits

    Jackfruit Curry prep: you have to have used cooking oil to latex out of ur hands and the knife. Better to use a pair of gloves. Loads of old news papers keep the fruit when cutting...soak a small piece of news paper and apply on knife as well as on the fruit to take off the latex.... Apply oil on the knife before use it. always use used cooking oil (after frying anything like papadams)...this is the way of recycling of used cooking oil..I collect the used oil in a big bottle or plastic bottle with named as "Used cooking oil" Good luck ...
