Best Boiled Peanut Recipe

  • This boiled peanut recipe is a southern tradition and a delicious mess. You can readily find boiled peanuts sold along roadsides throughout the Southern USA. Boiled peanuts are a messy treat--and a little bit of work to eat--they're kinda like eating pistachios in a soggy shell (not taste-wise, just work-wise). I love 'em--I don't make them, 'cause I'm too lazy--but I'm always happy to eat them when CG boils up a batch, especially if she's digging them out of the shells.     Boiled Peanut Ingredients:
    3 lbs RAW "green" PEANUTS
    ½ cup SALT
    optional:
    BAY LEAVES
    CHILI POWDER
    GARLIC fresh or dried
    HOT PEPPERS fresh or dried
    HOT SAUCE
    flavored BOULLION (broth)
    ...pretty much any seasoning that you like!
    Boiled Peanut Directions:
    Ideally you want to use raw "green" peanuts. Green peanuts are not green, that just means they're minimally processed--pretty much just out of the ground. Use green peanuts quickly, because they will not keep long and are prone to mold. Green peanuts are ideal because they will more quickly and most readily absorb the seasonings during the booil. You can use peanuts that have been dried in the shell, but don't use roasted peanuts.
    Wash and rinse the peanuts thoroughly, and then place them in a large pot and cover with plenty of water.
    Place on the stovetop, cover and bring the pot to a boil, then reduce the heat to medium and allow the peanuts to cook for 2 hours. Add more water to the pot as needed. The peanuts should always be covered in plenty of water. At first the peanuts will float, but after time, the peanuts will sink.
    After 2 hours, add seasonings (it's in the latter part of the boil that the peanuts absorb the most flavor). Add salt, which is the primary ingredient--in fact salt is all you need; many folks JUST USE SALT--they're plenty tasty that way, but we prefer to add other seasonings as well, which is generally called "cajun boiled peanuts". For this batch we added several cloves of raw garlic, dried chili peppers, and ½ cup chili powder. But you can add whatever seasonings you like.
    Cover, and allow the peanuts to continue bubbling on medium heat for 30 more minutes.
    After thirty minutes, remove the peanuts from the heat and allow to sit in the seasoned water until they reach the desired flavor, about 2-5 hours. The longer they sit cooling in the pot, the more seasoned they will become. Give them a try every half hour until you're happy with the flavor.
    They are a mess to eat, but delicious and addictive. Once you start eating them, it's hard to stop--they will go quickly! If you have leftovers, just drain them and store them in the fridge in ziplock bags. You can also freeze them in ziplocks for longer storage.

    One of my few memories of my early childhood is the peanuts we bought on the side of the road. My mouth is watering just thinking about them. I’m going to have to make them!

    Born and raised in SC, I love boiled peanuts but just with salt added. I make my own for my family, who love them as well. If you’ve never tried them, you don’t know what you’re missing.

    Boiled peanuts are my favorite thing!!! But I eat them different! Lol I like to suck on the shells then when all the juice and flavor is gone I crack it with my teeth and suck the peanuts out of the shell then throw the shell away! Lol they're my favorite road trip snack. That and sunflower seeds lol

    Wow.. Brings back memories of my grandmother pulling up the peanuts from her garden, washing them and putting them on to boil and it seemed like FOREVER lol but when they were done oh boy what a treat!! If you think boiling them takes too long try roasting them from the raw stage; takes even longer but oh so, so good either way!!

    My first time having boiled peanuts was in California in an Asian market. I fell in love with it and it was just plain. I’ve never thought about seasoning them before. Ima give it a go tonight. Can’t wait to see how it comes out.

      down in the Southeastern U.S., especially in Georgia, it's easy to find roadside stalls along the highway where folks sell boiled peanuts...that's one of the things I miss most about the south

    OMG, How delicious! I purchased 3 pounds at my local Farmers Market and made this recipe, they are outstanding. The last time I made Peanuts, I just made them with the Salt. The Chilli and the Garlic recipe added a kinda Georgia/Mex taste that I love. Next time, I will add the peppers, but right now I am feening to fill up on these Goobers.     I LOVE Boiled peanuts. For whatever reason I hated them the first time I had them back in 2002 but since then it has become my favorite treat! We did not get this in Louisiana & Texas up until recently

    I can't wait until August. That's when our local farm has their roadside stand up until late October with their boiled peanuts. They are so good! But they also had some green peanuts in our local Kroger so I'm boiling some as we speak. I do like to add a little sugar to them but not too much.

    mmmmmm I fell in love with boiled peanuts years ago, whenever I'm on the road I try them all and today I found raw peanuts at krogers, I made sure they were raw and whoop they are now on the 2 hour boil. Yummmmmmmmmmm

      You can make any videos you want about what ever you want. I just meant when you a true southern you can eat boiled peanuts with out getting them on you. Because you can eat em with one hand. If you were asking what I meant about it.

    Oh I love peanuts but never knew about boiling them...this I have to try!! For some reason they are easily available here in the supermarkets around Halloween but I don't see them the rest of the year, will have to keep looking as I'm dying to try this now. Thanks for the inspiration :-)

    Ahh, I miss home after watching this. Been in Europe for 16 years. It's difficult to find green peanuts in the shell here. Buck, do you know if ya'll used Virginia type? I know ones used for boiling are usually more resistant to mold. For those who think this is a strange way to treat a nut...peanuts aren't nuts, they're legumes, like chickpeas. thx Buck and CG :)

    Picking them out of the shell is part of the fun for me. Just like oysters, crawdads or pistachios. Although there is an art to eating boiled peanuts while driving without making a mess. I just put the shell and all in my mouth and shuck the peanut with my tongue and teeth. haha

    Traveled north and by accident saw "Green Peanuts" at Seiler Farms, (7711 N US Hwy 441, Ocala FL 34475). I got half a bushel of green peanuts for $20. I love boiled peanuts at Race Track gas stations but had no idea how to cook them! Thanks for spicy recipe!

    I'm southern born and bread and I love boiled peanuts when they are seasoned right. Sounds like she knows what she's doin and the juice in them......... Oh man, it'll make ya wanna slap somebody. I don't really talk country but I thought I'd throw in a little southern flair ya'll.

    I'd never heard of boiled peanuts until I went up to Houston through Victoria and saw them at a corner store. I was kind of confused and thought it was slang for some sort of soup, but then that didn't make any sense because why would they be selling soup at a corner store? Haha! I poked around at the crock pot they had them in and sure enough it was filled with soggy peanuts. I didn't try them, but now I kind of wish I had.

    Sounds like a good recipe. I'll give it a try. Cooked my own a couple of times before and spice it up by ear. I do all my cookin' by ear. Can't pass on family recipes 'cause its all off the cuff, go with the feeling at the time. My kids hate that. They love my cookin' but hate that I can't pass on a recipe to them. I told them to look into their genes----it's all there.

    I'm from the south they had these in many gas stations growing up but can't seem to find a good recipe that matches the old homemade has station tastes from northern Georgia... preferably Cajun blends and have been looking for a similar recipe I tried the crab broil stuff but doesn't even compare would this recipe be more of the general common taste or just a good recipe for boiled peanuts just wondering

    When I lived in southern Louisiana, I used to love them, but like you, man they be messy. You could, I imagine ya still can, find them at most decent gas stations, along with Boudin. Man, I miss Boudin, too. I'll have to try and make some boiled peanuts at home.

    Just going straight to peeling them open like that you miss most of the best part, the juices. You place one end of the peanut in your mouth with the seem of the peanut in a vertical orientation. You bite just strong enough to open the seem of the peanut and suck out all the juices. Then you can open the peanut the rest of the way to get to the rest of the treat. This way you don't miss out on any of the flavor and they are much easier to eat without making a mess.

    I am 34 years old. I have lived all of my 34 years in Virginia. One would think I would have had a few, nope, I used to think that was so nasty. Confused as to why someone would boil a peanut. One of my coworker made some and suggested I try them. I can not believe I used to turn my nose up at them. They are so good. I have buy some and I am going to try my hand at cooking them. Folks don't know what they are missing.

    Nice snack. I am from india mostly we use pressure cooker to reduce the cooking time. Buy the pressure cooker if available and enjoy frequent snack.

    Once they cool or they have sit for a few hours do they stay mushy? I'm southern and have never had a boiled peanut but have always wondered what the heck the deal was with them.

      kab4292 after they've cooked for just a couple of hours, they're already soft, and they stay soft, even out of the water; CG adds the seasoning after 2 hours and let's them cook another 30 minutes before removing them from the heat--the longer they sit, the more flavor they will absorb--it's a combination of how much seasoning and how long they stay in the pot that determines the flavor--they can get TOO salty if left too long with too much salt, so really it ends up being a matter of taste...it's good to taste test them every hour after cooking. CG is pretty conservative with the salt, but we generally let them stay in the pot quite a while.

    Green peanuts are fresh from the ground raw peanuts are air dried and take a lot longer to cook. Will have to try your recipe though they look great!

    You don't 'peel' them, just squeeze them into your mouth. Properly cooked the shells are very soft.
    If you've had 'edamame' at a Japanese place that's served in the shell...it's exactly like that.
