I've noticed the same microclimate in Tenerife also, with the North West being alot wetter too - those mountains really trap the clouds in the Canaries! Great blog i think the Spanish tourism board should pay for your flights lol! As for the potatoes having just got off the bike and awaiting the oven to finish i'm like oh my god they look soooo good 🤣! I would have napkin a few of those bad boys at the food stop just to try a date potato smash later on in the ride - could just be the ultimate bonk avoidance 🤣!
The Canary Islands are like heaven to ride on. Definitely better than Mallorca in my opinion, just the flight is double the length. Much more consistent weather though 👌🏻😊

Please keep this a secret. The North is as the video and there are many ways up. Weather is changeable with low cloud at times, and traffic can be heavy in the week( more than south/west) but my favourite place to ride.
