So I tried this and it was great! Part way through the process I have these milked soaked donuts and I did not want to just throw them out so I added eggs to make:
Donut Bread Pudding
3-4 discarded milk soaked donuts
1 whole egg
1 egg yolk
1 teaspoon sugar (optional, to taste)
1/8-1/4 teaspoon salt
1/2 teaspoon vanilla extract (optional I would play this by ear depending on the flavor of your base donut and how vanilla you want the end product to be)
Pinch of cinnamon or nutmeg or other baking spice (to taste)
Preheat oven to 325
Combine everything but the donuts with a whisk until homogenous in a container with a spout
Butter a baking dish of appropriate size about 1/2 quart/475ml per 3-4 donuts.
Distribute the discard donuts in the baking dish and pour egg mixture over the donuts. Gently fold the donuts over the mixture until loosely combined, mostly want to avoid puddles of plain egg mixture.
Bake for 50-60 minutes until the edges are bubbling and the center of the mixture is puffing up and golden brown.
Let sit for 20 minutes and serve.
Well, now I have my donut coffee and a good side dish. Unhealthy, but really, who cares? Thanks for the recipe!

I was thinking about chopping up the donut mass, pressing it into bars (with additives or baking if necessary) and coating with chocolate, but I think this is even better. Sounds like it'd work better and even be nice with coffee.

I’ve just made this and it’s awesome. Literally a liquid donut. I had a bit of donut milk left after making two coffees so used it to make a donut hot chocolate for my daughter and that was pretty amazing as well!
Blimey that must have been amazing for hot chocolate. Could easily see myself getting addicted to these if I tried them. I wonder if any independent coffee place will see this video and decide to add it to their menu? Everyone else has pumpkin spice at this time of year, so having a donut coffee would stand out.
I can also see this donut milk being useful for something like ice cream. Ben and Jerries would definitely make a donut flavoured ice cream if they saw this video. I mean they already have birthday cake flavour ice cream that has actual birthday cake in.
Though cos it's milk, it'd work better in gelato. Cos gelato is not pure cream like ice cream, it's like half and half milk and cream, but counterintuitively it actually tastes a lot creamier than regular ice cream. It's because of how the freezing process differs, the ice crystals are much smaller in gelato, so it's smoother. So someone could make donut gelato with it. Unless they're a big enough company like Ben and Jerry's that they could deal with having to wait probably days and days of crushing the donut into heavy cream and then waiting for it to strain out a bunch of times, and use a giant version of James's freezing centrifuge to help.
I also wonder what it tastes like as the milk for a bowl of cereal. And even how it tastes in tea. Something like chai tea I think would go well with the donut milk because it's got such a strong and sweet flavour already. With regular black tea, the donut milk would probably overpower the tea flavour, unless you used like 4 tea bags to a mug, and added the same amount of milk as normal. That'd be a caffeine boost. That's how I make tea anyway, I use 4 or 5 bags per mug and then add milk. That way it's actually strong (cos usually when someone asks for "strong" tea they usually mean they want less milk than the average person, which makes no sense because if they're still just using one bag, then it's technically the same strength).
Though I definitely would try a regular black tea latte, made with donut milk, at least once. Just to see how good that is. I bought some teabags years ago with some combination of stuff in them that tasted exactly like cake to me. I've never been able to find them again. They were so lovely.

It's 2021: just buy one. culinary centrifuge by Dave Arnold's company "Booker & Dax," less than a grand, great for cocktail work. I'm a bartender/owner and I own one of them, they're not perfect but waaaaaaaay safer than a spinning bucket model.

As somebody who used to work in a lab that did a lot of biomass extraction and processing... milky doughnuts are not a weird thing to put in a centrifuge.

Love this. I’m glad you started with this being an “answer to a question no one asked,” because one has to wonder why you wouldn’t just eat a delicious doughnut alongside a good cup of coffee. And then the answer, “sometimes it’s fun to have fun.” Perfect.
Now I want to try doing something like this with cereal milk. I don’t know if that has already been done but it would be cool to see how different cereals flavor the milk and subsequently the coffee!

As a PhD student with access to a particle sizer, which I used more than one time to investigate the particle size distribution of my ground coffee, I can relate!

for me personally i think some fruits can go well with specific coffee, like eating grape to enhance the grape flavor notes in a coffee maybe
Cake for me or good chocolate. But I tend to have breakfast with coffee or just in its pure form ^^ how about you? James actually made a recipe about a coffee cake which I believe is a good option!
Agreed, although I think a lot of stuff pairs well with coffee or specific coffees so it might be hard to do a video like that... imo every breakfast (except eggs) will go great with any coffee, oranges tend to go great with cold brew, espresso pairs perfectly with almost any desert and a lot of fruits but also with hearty foods like a good baguette or even steak (honestly just try it), and a pour over I would just have in its own :)

@@RoraighPrice yeah and that's the point... of cause there will be things that pair well with coffee from a objective view but in general it's about what ever you find tasty and fitting with YOUR coffee that's also what's the fourth wave is. It's what ever the consumer likes not what some taste expert things is a viable option and so YOUR own taste is bad... it goes down to preference. And yeah I know there are things that will blend the taste of coffee like very fat food but in the broad scheme of things it will always be a personal thing. :)

So ratio is 52 g of doughnut to 100 ml of milk

Sounds fun indeed. I grew up with Krispy Kreme donuts and found coffee and espresso a bit later... I can imagine making this drink and having a good time... as for drinking this drink, yeah, I'd enjoy that too -and watching friends drink it. But having the donut and the espresso side by side would last a touch longer and bring a combination of textures. Thanks for the idea. I might try this with my current fave donuty item, the maple bar.

I find that absolutely fascinating about ElBulli’s pastry chef calling a Krispy Kreme the perfect desert. I couldn’t agree more. I’ve been to a lot of good restaurants around the world, and I’ve never had a desert that I’d legitimately call ‘better’ than a fresh warm Krispy Kreme.
Couldn't disagree more, but it's a key reason why it's fun to be human, we like different stuff and it's fine!
Best and perfect are different. A "perfect" desert that doesn't incorporate the properties of ice cream and chocolate seems less than perfect to me, but those trying to incorporate them would drag the donut down a notch.
@@bluepapaya77 I bet a Krispy Kreme affogato would be divine. You could follow all the steps here, but with cream instead of milk. Turn that into ice cream, scoop out a portion and pour over the espresso.

The new Faviken book tells a story of the chef, Magnus Nelson, learning the beauty of sauce brioche. Basically, take a fully proofed loaf of brioche ready for the oven and stir it in a pot of milk (or water?) breaking it up and cooking until it starts caramelizing. Combining the two ideas of donut and brioche, you could be really onto something. I'd be curious about using brown butter but straining out most of the fat. Onto experimenting!
