To put things simply, standing is an acknowledged gesture of respect. There is a custom in the armed forces of standing to attention when a superior officer enters the room, for instance. The problem is that the kneeling tends to be done during the national anthem, when people are supposed to be standing as a gesture of respect to their country (which pays them lots of money to play football).
