  • Indulge in the timeless flavors of Italy with my classic carbonara recipe. Perfectly al dente fettuccine, coated in a creamy, velvety sauce made with eggs, parmesan cheese, and crispy bacon. This dish captures the essence of Roman tradition, delivering rich, comforting flavors that are sure to satisfy.

    500g pasta
    400g bacon
    140g parmesan cheese
    x7 egg yolks
    1 tbsp vegetable oil (optional)
    1 cup reserved pasta water
    Salt and pepper to taste
    2 tbsp parsley to taste and garnish
    Start by chopping the optional parsley out of the way so you don't need to clean another chopping board.
    Grate your cheese, its best to grate it as fine as you can so that when you mix through the pasta it melts easier. Place a little to the side to top your pasta at the end of the method.
    Separate your yolks from the whites, keep your whites for another recipe or to make breakfast the next day.
    Add a little pepper into the yolks to bring out the flavour.
    Turn on the heat (low) and add in a little optional vegetable oil to prevent the bacon from sticking to the pan.
    Dice your bacon, ensure you keep the fat as this assists in flavouring the pasta dish. Render bacon until cooked, break up the bacon so it cooks evenly.
    Add the yolks into the cheese and stir then set to the side.
    Start your pasta, ensure you reserve some of the pasta water this along with the yolks and cheese creates the sauce.
    Add the pasta to the bacon and coat with the bacon and the rendered fat, add the pasta water and toss well.
    In a large bowl add the pasta and bacon over the egg and cheese mix and stir vigorously, this creates the creamy pasta sauce. Keep stirring so the yolks don't solidify.
    Garnish with parsley, pepper and parmesan and enjoy this authentic Italian dish.
