    83g butter
    3 egg yolks + 1 full egg
    143g caster sugar
    80g lemon juice
    1 tbsp lemon rind
    pinch or two of salt
    Start by adding all your ingredients to a medium saucepan, that’s right all ingredients in. Place the heat on as low as you can so you can gradually bring the contents to temperature.
    Once the butter has melted you can increase the heat slightly but if the curd starts to simmer pull off the heat right away.
    Stir stir stir, you will be stirring for at least 5 to 8 minutes depending on your desired consistency. You can have short breaks however you need to ensure the saucepan is off the heat to do so.
    Place into a heatproof bowl and let cool before placing in the fridge.
