- This Lemon Meringue Tart/ Lemon Pie is a perfect refreshing dessert for spring or summer days. Ingredients

Pate Sablee
1/2 cup (110g) unsalted butter, room temperature
1/4 cup (30g) powdered sugar
1 egg
1 1/4 cup (160g) all-purpose flour
1/2 cup (50g) ground almonds
1/4 tsp (1g) salt
1 tbsp (15ml) milk, if needed
beaten egg, for sealing the crust while baking
Lemon Filling
1 cup (200g) sugar
1/3 cup (40g) cornstarch
1/4 tsp (1g) salt
5 egg yolks
1 1/3 cup (320ml) water
2/3 cup (160ml) fresh lemon juice (from 3-4 lemons)
3 tbsp (42g) butter
Zest from 1 large lemon (10g)
Meringue Topping
5 egg whites, at room temperature
1 cup (200g) sugar
1/4 tsp (1g) cream of tartar
1/4 tsp (1g) salt
1 tsp (5g) vanilla extract

Are these beans left of any use after they serve their purpose in blind baking .I mean do they get cooked as well and can they be used for something else like in another dish?
For the meringue step, do I store the egg whites (without any additions) in the refrigerator for the next day so it can be served fresh? Or do you advise to whisk it first then refrigerate it?
