    Dear Jeremy - you have a lot to answer for!
    I have been cooking Anglicised Chinese food for over a decade but the 'lockdown blues' have somewhat deflated my effort and enthusiasm.
    YOU HAVE ALTERED ALL THAT!!
    I've now been on to Wing Yip and Tradewinds and have both watched your videos and stocked up with their supplies that I needed to fully re-engage and extend my oriental* repertoire. As pensioners we are always looking for low meat and healthy food and you have provided the way forward again. I have abandoned 'chip shop' batter for your cornflour alternative and 'her indoors' heartily approves! Thanks for starting me off again on the culinary adventure.
    Sadly, on my pension, I can't afford your books or to become a patreon but thanks all the same.
    Keep educating us in 'the art' and keep it simple - don't get like 'Jamie' and make it so complicated that only the well-off middle-class can afford to keep up with you. He lost the plot some time ago - please don't go down that road.
    PS - the lockdown must have hit you pretty hard and I'm seriously sorry for that. I truly and sincerely hope that you weather it and come through and prosper - YOU DESERVE TO!

    On a positive note - I bought a SCHOOL OF WOK cleaver/knife and look forward to getting to know it

    Sub half the palm sugar for honey and the marinade will stick to the chicken a bit better. I also like a squeeze of lime to brighten everything. Great recipe!!

      As a Thai, we don't use lime and we don't use honey. We use palm sugar.

    I swear you guys have a web cam in my kitchen... a few weeks back i had prawns sitting there...not sure what i was going to do and Booom up pops one of your vids with a prawn dish...Happened a while later with Belly Pork....Today i have chicken thighs on the bone and was looking through your extensive library of deliciousness when i got a notifications for this....hahahaha Going to trick you next Wednesday a get some odd protein just to check LOL.     When we’re in Bangkok, street food looked too delicious, I ate it but had a bad tummy. So I had to eat in the hotel and got better .

      Sorry to say, but I've seen (On CZcams!) some ppl cook rat legs that look just like a chicken leg! You were prolly infected with something. God bless and check CZcams for what I saw! It's so true!

    Sorry, being Thai, I can say you burned that chicken and we usually grill it over charcoal...not in the pan and oven. Plus we use coriander roots, not stems in the marinade.
