In Thailand we had a very similar recipe like this that is very popular. It's like hainanese chicken and rice but with fried chicken instead. I missed it a lot but too lazy to fry chicken myself. I will give this recipe a try. I knew I'm going to love it. Thanks for sharing.
Try the larger holes on your grater, much easier. I only use the very small ones to make garlic juice and pulp for garlic butter. I always make chicken and rice in my rice maker. The seasoned chicken cooks on the bottom. I don't bother rinsing rice, but then it depends on your rice. I put frozen veggies on top to steam. It makes a great one pot meal.

I tried this today for lunch, the joy of WFH. Used leftover red roasters chicken (don't ask) instead of KFC, substituted soy sauce for light soy sauce (less salty). Made 1st and 2nd condiments. I'm a big fan of ginger/shallot oil. The hack really does work, it was absolutely delicious and perfect for lunch. Thank you Janice for making the video, I'm a big fan of yours.
Growng up down South, the 'KFC chicken hack' thing... not new. My mom was doing it in the 60's, but she used the left over gravy as sauce... I am so trying that ginger scallion sauce.
Made this today! Yummmmm. I used hot and spicy chicken, made the shallot and ginger sauce but with vegetable oil and a little bit of sesame oil cause i didn't have peanut, kecap manis then used Lee kum kee chilli oil with white vinegar, sugar and some extra garlic. Even more of a cheat version but was delicious 😍
The name is nasty. Wicked is very unappetizing. I wouldn't get something named "wicked", on principle, as well as wickedness is horrible and the thought of it is gaggy.
Janice I'm Malaysian and I highly recommend the hainanese chicken rice at Malay Chinese takeaway in Wynyard. Their laksa is to die for you which you already know. I ought to try the hainanese chicken rice place you recommend to compare

in the soy sauce you could try a touch of vinegar and a half a chili pepper should add a little kick to the sauce.or if you don't want spicy a little oyster sauce or hoisin.
Add choy sum with wonton soup will elevate it further. Can never go wrong with adding garlic, onion, ginger to any dish also chili and lemon. Seems your academic achievements were the decision by parents, nevertheless the credibility, skill and knowledged gained can be leveraged to lead a richer life. I admire your sea change!!

kind of late to the game on this but i make mine with one cup rice fill with chicken broth to the one cup line in the rice cooker some frozen mixed veggies mayby half a cup. i just eye it. 1 tsp soy sauce. 2 teaspoon of lusianna hot sauce. and a tsp of cajon seasoning. 2 peices of chicken. i just shred and debone the chicken at the end kind of like a cajon rice casserole.
Hey Janice, As a guy who cooks, i would like to offer a few "minor adjustments" that might help improve your experience. 1. Ginger & Green Shallot Sauce - for the heated oil, i would add white sesame seeds (about 1 teaspoon for the amt of oil you used) inside to make the oil more fragrant - fry a while till the sesame turns golden brown. - just before pouring the oil out, i would add in my ginger, stir for 15 to 20 seconds - then pour everything into a dish containing the green shallots - finally, i will salt the mixture as i stir to get the right flavor 2. The KFC Chicken - the best of best chicken part to use will be the wings and thighs. wings for the fats, and thighs for the meat. - try using Dark Soy Sauce instead for the rice (the sweet + sticky variety if you can find it). 3. Mixing 1 & 2 together. - there are 2 ways to go about this. Option 1: After cooking both items separately, mix the rice and the ginger green shallot sauce together, then eat. Option 2: Add some of the ginger green shallot sauce into the raw rice and KFC, and cook everything together. That's it. I hope you find joy in eating the food. Take care!

If you buy more chicken -- turn on your grill and put the chicken under it (not too close) The excess fat drains from it and the skin gets all crispy AMAZING (and less fattening if there is such a thing lol)
I used to use a lot of fresh ginger - I’d blend enough for the week n kept in fridge. I tried grating recently n it was very difficult. I found it was better to chop finely n mash with a pinch of salt in a mortar and pestle. Cut against the stringy fibres
Jimmy's Kitchen Town Hall is great and I miss it in this pandemic. They're really efficient at putting out their laksa noodles pronto too. Curious about this hack, but it makes a lot of sense. The KFC spices plus the broth to steam the rice, it basically takes all the flavour into the rice and the cook softens the meat, genius.

i done this but what i do is separated the crispy chicken skin and shredded chicken meat from bone. put shredded chicken meat into rice cooker together with rice...cook it. after done cook....chopped the chicken skin put the on top of the rice when you serve the rice on plate.
@@JaniceFung I'm not sure if it is or not. It was just something I had during uni because I was lazy with cooking. A few other people I know have mentioned they did it too. I used it as a substitute for youtiao. Although other times I just add it straight into the congee.
I loved the K.F.C. recipe that looked so good. In America were I am from in the state of Louisiana. That's just chicken and rice casserole. My family already stopped washing rice more than one round many years ago. Basically washing rice is only meant to remove dirt. The white stuff in the water is actually a great contributor to the scent.

Great video (as usual) Janice, but just to clarify, did you mean chicken "stock" when you said chicken "broth"? There's a huge difference both in flavour and in price between them. Cheers.
if you don't own a rice cooker, don't worry, you don't need one - you just need to know how to cook rice properly. 1. measure the volume of the rice you are going to cook (this is important) 2. soak the rice for 30-60 minutes in cold water (this is optional but gives best results) 3. wash the rice 3-4 times until the water is clear. 4. drain the rice and then add 1.5 times the volume of water to rice (i.e 1 cup of rice - add 1.5 cups of water) - add a tablespoon of salt - a squeeze of lemon juice (optional but gives best results) - add anything else you might like - soy, boullion cube etc remembering to ease off the salt if adding other salty ingredients. 5. place KFC on top, cover the pan and bring rice to the boil on a high heat 6 reduce heat to low and simmer for 15 mins 7. after 15 mins turn off heat and leave rice, still covered for another 10-15 mins.

I use chicken tenders or boneless wings and mixed frozen veggies, mushrooms with chicken stock. It’s fantastic!

I recommend a really good peeler for the ginger. Makes it fast and easy.

Washing rice reduces the starch.. and prevents the rice from forming spores that makes it bad easily..
