They get into exactly what Aizen's men took from Matsumoto much later. Basically, what they did almost destroyed her soul (like happened with the souls that disappeared during Aizen's other experiments at the time), but Gin saw them leaving the area on his way back from getting firewood, arrived in time to save her using the same technique Rukia did to pass her powers into Ichigo (thus both Gin and Matsumoto having dust-based powers--her current powers grew out of the jump-start he gave her to keep her alive), and then went after all of them. His entire psychopathic demeanor for Aizen is only half real, as he needed an excuse for why he just showed up and slaughtered Aizen's men, only stopping when he realized that he couldn't kill Aizen himself. He wants to kill Aizen and take back the Hogyuka specifically because he can retrieve the part of Matsumoto's soul that was removed, and so the last 100+ years have been him basically pulling an Itachi. This also is why he never caused significant harm to Ichigo--he wants a backup in case he can't kill Aizen.
Very interesting information and assumptions. Can I ask where the information about how he saved Matsumoto came from? From the databooks, or maybe from the novels?

I believe the light novels delve a little deeper into why Gin betrayed Aizen, specifically what happened with Rangiku (she had a piece of her soul taken to power Aizen’s hogyoku, but he also took something else, which I won’t say because it could be a spoiler if the light novels get adapted into the anime, or in case you ever decided to read them after the TYBW).
Even though Ichigo is the mc Kubo likes to focus on almost everyone. Bleach has a theme about butterflies like the Hell butterflies and the one Uryu was talking to in prison. Butterflies must be very important in Bleach.
