For anyone who is curious I am a former USDA- Food Safety & Inspection Service officer which is the agency that does Meat and Poultry inspection for the US. This scene is very accurate with the seal. Those seals are government issued and have to be attached to the trailers. If they are not. The load is not supposed to ship or be accepted by the next business or person in the supply chain. Now the seals back then we’re very simple like you saw, but today they are more advanced and have more tracking capabilities to ensure no one tampers with the meat in transit to protect the food supply from threats.
Very interesting on the latest having tracking etc - expected these days, but had no idea. Thanks for sharing!

Best steak I ever had was from my step fathers recipe.
He cook chuck steaks that had bone in them. He seasoned them with salt, onion powder and garlic.
After he cooked them, he cut up these peppers.
1. Green pepper
2. 2 yellow peppers
3. 2 ripe tomatoes
He put in either a bit of butter, or oil and stir fried it with a little salt. Once the juices got out of the peppers he poured them on the steaks and let them sit.
I learned it over time, but good lord that recipe has saved our family during these times.

@@prisonmike1139 The tomatoes would also act a thickener with the butter, so don't imagine it as a watery sauce (although it would be rather thin) but like a peppery butter sauce. The peppers would overpower the tomato flavours anyways, the tomatoes just adding a nice hint of both acidity and sweetness to balance them.

What this scene showed me was that regardless of what era you came from, fries is a good pair with steak

I had a co worker ( he pass away few years ago) and he lived this era of trucks with meat to delivery in some parts of the country. Usually he got a lot of "extras" with some favours or "special" deliveries.
He lived the era of NO computers, no cameras, GPS or any external controls...only human interactions. If you have a friend in a way to this city, always bring something for him, and he always is waiting for you with a lunch.

I was involved in the actual investigation into the disappearance of Jimmy Hoffa. The older version of Sheeran was spot on. I do believe that Jesse Plemons who played Chuckle Obrien would have made an excellent 28 year old Frank Sheeran, with all due respect. I'm mentioned in the book I Heard you Paint Houses by Charles Brandt, for verification.
I think Jesse would have been a tad dissonant with DeNiro's appearance. So good hearing about this story from a first sourcer!

The acting here is so good that it goes above everybody's heads except real actors. The timing is perfect. It's difficult to recreate an incident while making it look like it's being filmed in real time. This was an actor's movie.
