My favorite episode of babish or was it basics that he really tried to say he was not a professional and the whole reason he made this series was to show that we, and me the average joe, can make culinary magic with a little effort.

Because he recognizes - and respects - talent in those he meets. He learns from watching people like this, and to have them there in person .... But yeah, the humility just makes you love him all the more because he's not trying to show off, he's just being his own self and you can tell the professionals generally enjoy themselves as well in an atmosphere like that!

I adore the excited spark in Chef Dominique’s eyes when he told Babish about adding the vanilla to the caramel instead of the custard. He was so happy to share that little secret. (At 5:50)
Dominiques accent has 2 degrees in culinary art.
Dominique comes across down to earth, warm and no nonsense. He's really embodying the idea of everyone can bake by sharing things in such a calm and simple way.

I absolutely love that in these episodes Babish is more than willing to assume the role of student and say through his actions "the point of this is for me, and therefore the audience, to learn through you. Please teach me sensei!" A lot of other CZcams 'personalities' would be too selfish and self-important to do this!

Any other Brazilians here? We make something very similar here called Pudim, but it's made with sweetened condensed milk, eggs and milk and it's made in a blender. Very very common dessert. I love seeing other culture's renditions of this!
I learned to make flan from a costa rican friend, and she also us s sweetened condensed milk, eggs, and milk!

When I was 15 I found a French cookbook in the school library and decided to be ambitious and make a fancy meal for my family. Flan was what I made for dessert and I was so proud of myself when it came out right.

If I were in the presence of someone that serene it would probably make me as simultaneously calm and anxious as Andrew there.
I just made this recipe, and...I have questions. So, the amounts in the recipe make a LOT of custard. Significantly more than 4 ramekins worth, and my ramekins are a bit bigger than the ones they used.
Also, the recipe is for four ramekins, but when they actually put it in the bain marie it's only 3? Are we supposed to just bake the 4th one separately? I jammed all 4 ramekins into the pan and it worked ok, but I don't necessarily recommend that. I had to lengthen the cooking time, and because they were so close, the water bath couldn't do its thing in the same way. I'd recommend making this recipe for 6 instead of 4: you can make the same amount of custard, 1.5x the caramel, and then you can bake it in two batches of 3.
This is just so cute to watch honestly, you just know his heart is pounding from nervousness, and Ansel is just so friendly! I love this!

I’ve been making flan exactly like this, except in one large dish instead of ramekins, since I was a teen. My grandmother and I would make it all the time, and it is my favorite desserts! 🍮 💜

Being Hispanic flan is something that i love. It was always present during birthday parties and it's still one of my all time favorite desserts, also a wonderful version/variation is coffee flan as the coffee adds an amazing depth of flavor

My grandmother has been making this for longer than I have been alive and she legit just calls it pudding. She refuses to even register that this is not what a pudding is.
I mean, pudding means different things depending on where you grew up. Pudding to me is chocolate flavored oobleck, but if I go to a bubble tea shop its basically this but probably made with gelatin or ajar ajar, and pudding in Europe is a meat patty thing.
@@donutchan8114 isn't oobleck what you get when you mix water and cornstarch? It's like custard except without eggs are sugar - usually used for science experiments in schools where if you punch it, it's solid and when you place your hand on it, it sinks in. That's my oobleck at least

I'd say pudding is a more general term for any jiggly meal while Crème caramel is a specific type of sweet custard-based pudding.

We have a much more sweeter and *heavier* version of crème caramel . We call it Leche Flan (literally milk flan).
Our version is literally to die for . We usually put Leche Flan also on Halo-Halo which is another dessert from here. Shout out to all the Filipinos watching this . :)
