How to Cook Cereal Butter Prawns

  • Nestum prawns or cereal butter prawns is one of my favourite dishes at a tai chow restaurant in KL. In this recipe, I removed the skin of the prawn so that it will be easier to eat. However, this is traditionally served with skin on!
    Nestum Prawns Recipe
    Ingredients
    500 grams prawns
    1 1/2 tbsp corn flour
    2 tbsp butter
    2 tbsp garlic
    4 stalks curry leaves (stalks removed)
    2 -3 birds eye chilli
    1 tbsp condensed milk*
    1 cup nestum (85g) mixed with 1/4 teaspoon salt
    Salt (to taste)
    Pepper
    Method
    1. Season shelled and deveined prawns with salt and pepper for 15 minutes
    2. Lightly coat with corn flour
    3. Deep fry the prawns until cooked and set aside
    4. In the same pan, melt the butter, add garlic, curry leaves and birds eye chilli and saute until fragrant
    5. Add condensed milk and mix in
    6. Add nestum cereal and panfry until golden brown
    7. Add prawns until evenly coated
    8. Add salt, to taste
    9. Dish out and serve with rice
    *This is normally 1-2 tbsps of evaporated milk, regular milk or milk powder. However, I had none in my pantry, so I replaced it with condensed milk. If you use unsweetened milk, then add 1-2 tbsps of sugar for sweetness.
