I was gonna say, this is very much still a thing. You can legit go to the baking section of most grocery stores and find mix specifically labelled for mug cakes.
There's breakfast ones too that come prepackaged in a microwaveable cup. I wanna say the brand is Kodiak, but there's prolly others lol
I think vegan sushi has a market. There’s been an increased concern with microplastics in fish and parasites. Would be a great option for vegans, pregnant people, or someone with parasite phobia.

I am not vegan, but I had a vegan pokebowl made with beets instead of fish and I was pretty shocked with how good it was. I had never had beets before, but I worked at a now defunct fancy convenience store in Portland, OR and we got free food all the time so I would just try random things. I would definitely eat the beet fake pokebowl again.

Vegan sushis are AMAZING! As a pescatarian I love having the option to eat sushis that are vegans, especially tasty ones! In Montreal we have many restaurants that offers it and it has been a trend there for already a couple of years. Vegan options in restaurants are more and more common too!
