  • I do love Yorkshire Puddings but my method was a little haphazard and didn't produce great results so I tended to buy the cheap frozen ones. Then I watched Butlers Empire (Sharon) make theirs and wow it is one easy to follow method so the full credit for that method goes to the fab Sharon and Martin at Butlers Empire youtube channel, if you're not subscribed already go check them out.     Hi Kerry I also like watching the Butlersempire Chanel and now do my Yorkshire puds the way Sharon does hers and fingers crossed its never failed yet. Loving the tips from both of your channel's 😀 I always put my batter mix in a deep tin and they always rise . This could be the reason why yours haven't risen as much. its worth a try ❤

      @@michaelbrock9122 part 2 here, I used plain flour but forgot to say (was poorly is my excuse) I also cooked them for 15mins which helped. Perfect yorkies as a result

    I haven’t make yorkies for ages, got lazy and used frozen ones instead. However I always used SR Flour but left batter to stand for at least 1 hour not in fridge, also had oven on maximum temperature and waited for oil/lard to be smoking before putting in batter. You’ve inspired me to experiment with my Ninja at weekend. Keep up the great work ❤

      Aww thank you Debs💕, I had the best yorkie results in todays vlog, after great tips from viewers👌👌💕inlet sit at room temp for 3 hours, and used sunflower oil which has a higher smoke point but key for me was cooking for 15mins on airfry 200c rather than the paltry 5mins. Yorkies tallest I've ever made and did not collapse at all!!!

    I'm sure you will have nailed yorkshire puddings by now. My recipe from another channel suggest pre-heating the oil for 8 minutes at 200°C, pour the batter into the hot oil then turn down the temp.to 180°C and cook for 16 minutes. This worked perfectly for me using my basic air fryer.

    I remember years ago Delia Smith using strong plain bread flour for making puff pastry as advised by John Tovey because the gluten content was higher and therefore the pastry less fragile and held its shape better. Does make great puff pastry. I also have a feeling that it has been used to make good Yorkshire puds and even though I can't remember who said it, or did it, it does make sense to use it. Personally, I love stodgy Yorkshire puds that have a bit of crispiness on the edges so I think your puds look great and I would eat them with lovely gravy on no problem at all. Great vid Kerry.     Hi Kerry another great vlog. I have been making yorkshires for over 50 years but never once used self rasing flour,always plane. If you split the milk with water they will stay risen. Just leave the mixture in the fridge for 30 mins before putting it into the fat. I'm doing them in my cosori and they are great, another tip is deeper tins so they can rise up the sides and they rise better. It's all a learning process and it's great to see how down to earth you are. The sane as Sharon and Martin on Buttlers Empire, yous are relatable and that's why I like to watch yous. Also Graham gets about, is another lovely down to earth man with some great recipes. Thanks for just being you Sharon. Look forward to the next one.

      Yorkshire pudding mix need to be left at room temperature before cooking. and yes always plain flour.

    I use the same pie dishes as you. I make mine to the Martin and Sharon's recipe from Butlers Empire and they do rise nicely. I don't use cooking spray though, I use lard. Good luck with your next lot.

    Hi Kerry, entertaining vlog again, I looked up on Google about the reasons for failure with Yorkshire puddings in air fryer and they said pre heating the oil should be 10 minutes, which seams a long time to me but hey ho! A tip I found for getting the mixture amounts in each tin is to use an ice cream scoop, works for me. 😊

      Cor 10mins does seem long, I tried again today Alan - 5mins heating oil (it sizzled) big difference I cooked batter for 15mins instead of the paltry 5mins yesterday. Made a huge difference, puds were tall and didnt collapse at all (todays vlog)

    I always use the method Sharon (from butlers empire) uses too after not having much success with other recipes and it works great but I have to admit I don't add an extra egg white. Really handy if you don't have scales too.

    Hi Kerry. My auntie Doris’ Yorkshire. Cooking fat lard. Heat well
    2 tblspn plain flour. 2tblspn water 2tblspn milk 1 egg. Mix well.
    Cook high. This makes probably enough for one, or two. Higher sided dish. This was from the days before air fryers. 😁 but I have cooked this in my Cosori and it was good regards from me

      Thanks Dave👍I got it from aliexpress, significantly cheaper than Amazon inc cheap postage, just have to wait 3/4 weeks for delivery. Fast becoming my most used Airfryer accessory 😃👍but dont buy their other accessories, the silicone melted when it touched a hot metal bowl so not great. Plate grabber however I use daily, it even lifts naanizza out of the basket

    They look great Kerry. I have used self raising flour once or twice, but best done with plain flour (I don't know why) you would think SR flour would make them rise, but in the case of Yorkshires I don't think that's the case.

      The tinternet said SF would help and it said an extra egg white would help too, but my biggest mistake was cook times, I have always cooked for 5 mins when it should be 15mins!! Todays vlog I had the tallest puds ever!! No collapse either - happy days lol

      Hi Sue👋 I love yorkshire - well whitby is my favourite, always went there over winter as it was the cheapest time to go (when I was a kid 1970s) pics of me freezing on the beach lol.     Iv never ever made Yorkshire pudding ( my hubby was the cook). Iv always bought then ready made ….. but I think I will give it a go I might even try chives I have normal & garlic chives growing in my garden great idea

    I always use 250 g plain flour 325 ml of milk & 4 eggs and bake in deep muffin tins never lets me down always perfectly risen hope this helps xxxx love all your vlogs 💕

      Kerry me again have you done the exact recipe as sharon yust try using 2eggs. Using plain flour Don’t try adding extra. Egg white she cooks her for 20mins on af setting , also sharon got her dishes from Amazon don’t open the draws before time otherwise they will flop dian keep trying

    I love butlers empire...I have made this but in my neck of the woods we call them popovers. I make mine in a silicone muffin pan. Not too bad. Question...where did you get your wisk. Love your show because you are so down to earth and show us what is possible when you don't think it is. Great job...keep doing what your doing...thank you for the recipes.

    Once it is cooked, open the tray to let the steam out, then close it back immediately and cook it for another 5 mins at a low heat. That will "set" the pudding (James Martin said so on the telly!). It works for me every time.

    Hi Kerry, I make my Yorkshire puddings following Sharon's recipe but I always use plain flour, I once used self raising by mistake and they didn't rise. I made them once in the air fryer in a silicon mould with seven holes in it. I found the bottoms weren't getting cooked and I had to turn them over. I also freeze them but when I went to reheat them they were really tough. I also use half milk and half water.

    If I'd taste tested one I would have had to taste test the lot lol 😆 😋 😂 we use plain flour so I've been informed by the boss batch cook and freeze our Yorkshire puds collapse too but it doesn't bother me as always absolutely brilliant 👏 😉 looking forward to the next one 👍 😀 😉

    At our Dollarama stores in Canada they sell these oval cast iron dishes that just fit in one side of the Ninja air fryer. They're just the right size for a 1 egg sized Yorkshire (I use 1 egg, a quarter cup flour and quarter cup milk.... we tend to use volume measurements unfortunately). 10 minute or so preheat then drop in the fat and batter. Then about 8 minutes to bake. They hold up ok. I think the shape of the sides helps since they're not vertical so the sides get pushed out and up. I often do a breakfast version and throw in a couple frozen breakfast sausages for the preheat stage to do a bfast version of toad in the hole, I guess. Thanks for the video.

      I have some oval stainless steel bowls but I tried again today with 2 diff types of *bowls, both shot upwards I cooked 15mins 200c/392f *bowl with high sides produced tallest pud - in todays vlog😄👍I like the cup method of measuring, just weights here is all grams😄

      @@budgetcookinguk Yes, I've just seen that video. They look great. The breakfast version I mentioned are often called German pancakes in Canada and Dutch babies in the US. talking to dutch and german people, they are neither. Oh well. Often made in cast iron frying pans in the oven and served with a squeeze of lemon juice and a shake of powdered sugar. My little one egg size takes 8-9 minutes at 390F... I wish I could change my Ninja to cesius.

    Used to do a recipe where you weighed eggs in their shell and flour and milk or water to match weight of eggs wisk up was great ❤

    Very hot lard is the key (not too much), and cook puddings at a high temperature. I've always used smaller, slightly higher sided tins too. Mind you, I would still love yours .. love a bit of batter me lol. I've watched Martin and Sharon for a very long time and Sharon's way of making the mixture is so useful. I wonder if it works for pancakes lol .. love pancakes made with buttermilk 😋😋 💕 and fruit of your choice ... banana is very good xx

    I saw the butler’s empire vlog and thought the recipe was worth a try (haven’t yet 😂). The only puds I have had which stayed up were shop bought. I thought they were supposed to collapse 🤣🤣

    I have read that using a combination of water and milk will help it rise better. Haven't tried it myself but I suppose you could do a small batch with one egg to see if it works. They look really tasty though. I love chives as well.

      Definitely plain flour, same method of putting together in vlog but cook for 15min airfry 200c - I did attempt 2 and they were the best puds I've ever made, and they stayed up! In todays vlog👍👍

    I use high sided type containers as the only way they can go is rise. Trick is leave the oil to smoke and be very quick to add ingredients to avoid losing too much heat. Don't open the drawers. I have a Cosori XXL 5.5 L. So it's easier in a 9 inch square drawer.

      I tried again today (it's up as a vlog) one high sided and same tin I used on yesterdays. 2 changes, I used plain flour and cooked for 15mins 200c airfry and they were tallest puds I've ever made, high sided one a bit taller than the other but both like tower blocks lol

    Kerry try them with plain flour
    next time i always do I use 4 eggs 140g plain flour and 200 ml of milk and it works every time but they must sizzle when you pour the batter in but I must admit I haven’t cooked them in the air fryer 😋 I will try that next time

    Hi Kerry, lf you look at an authentic Yorkshire pudding tin,there are 4 quite shallow compartments, so do not think it is the tin at all. Also yes l agree with the comments, Plain flour is a must.

    About a billion different ways to do Yorkshire puds but I’d say you need to heat your oil for longer, I preheat mine for 15 mins at 230c, then put my mix in a small sandwich loaf tin for around 11 mins, fingers crossed every time it’s been spot on

    I’m in Canada for 9 Years I failed every time theni experimented with all water and let the mixture stand for about 4 hours then make as usual and they never fail

    Only every use plain flour, I always do the extra egg white, I think too many eggs can make them too puddingy an lastly don’t over mix the batter, mix just until combined.xx

    Poke a hole in the Yorkshire pudding to release the steam which should help prevent them collapsing. Also, plain flour only.

    I think you do not need the extra egg white, plus you need 20 mins at 200. Also some folk turn them over for last 3 mins. Out of container. .I think you had to much mixture for time you cooked. My recipe book also suggests 20 mins maybe check after 18. Hope this may help. These were for silicone case, like cake cases and need that amount of time.

    always used plain flour, never had a problem, always rise beautifully.. used the same recipe as butlers for at least 30 years.. you changed the flour and added more egg so result will be different..

      I put half a teaspoon in batter today (it's todays vlog) used plain flour too but I cooked 15mins which I think was the success factor

    You should never use SR flour for Yorkshire puddings, always plain that’s why they are collapsing. Maybe need a little longer as well x

    Plain flour and little less eggs.
    Beat the mixture with wooden spoon instead of whisk..
    Let them rise from trapped air beaten in. Not from carbon dioxide from self raising flour.
    Beating the mixture creates structure from glutens that won't collapse when taken from oven!!!
    Hope that makes sense??

    seems like a bit of a faff, quicker in the oven, I use a muffin tin with lard or duck fat at least half full smoking hot and pour in batter straight from fridge, at least they are all cooked at the same time, I love my Ninja but only have the single one and it is not really beneficial cooking a batch. love your videos and that you show your disasters as well as your successes!

      Check out my vlog today, I cooked them for 15mins and they stayed up after an hour. Threw them bagged up in the freezer (well placed gently😄) in exact same state, never before have I had non collapsed yorkies!

    Plain flour enough salt and room temperature. Shallow dish and hot oil. In my airfryer my yorkshires, what can i say. Never could get it right in the oven, air fryer worth it just for potatoes and yorkshires. Butlersempire, you know, don't you? Lol

    Too many eggs giveYorkshire pudding an " omelette " taste and can give a big rise initially then a fall .

    You need Plain flour your tin is too wide & too shallow.
    The tin needs to be deeper more like muffin tins.

      My Yorkshire putting tins are quite large and shallow and they turn out fabulous, patty cake tins also make really good little puddings. But I agree you need plain flour.
