A Ramen Nerd makes Ichiraku Ramen from Naruto (Tonkotsu Miso Chashu Ramen Recipe)

    I was a huge Naruto fan back in the day and this was a video I’ve been wanting to do since I started this channel over a year ago. Naruto’s goto order at Ichiraku ramen was always Tonkotsu Miso Chashu Omori (large size). Tonkotsu miso ramen, is a little unusual as miso ramen began with chintan stocks, not paitan, but it isn’t so uncommon today and there are many popular shops that serve this style in Japan.

    Ingredients:
    Noodles (makes 3-4 servings):
    296g Bread flour
    4g Vital Wheat Gluten amzn.to/35dHHRo
    114g - 1 egg white + water
    5g baked baking soda
    3g kosher salt
    Pinch of riboflavin amzn.to/3m0nFzM
    Miso Tare (way too much):
    500g red miso blend
    500g white miso blend
    250g mugi miso amzn.to/2Fgi1Z2
    50ml Shoyu
    50ml Sake
    15ml Mirin
    17.5g Grated ginger
    25g Grated Garlic
    2.5g Ichimi togarashi
    2.5g sesame seeds

    1.5kg pork femur bones (cracked or cut)
    600g chicken bones
    300g chicken feet
    300g pork fat (preferably fatback)
    1 green onion
    1/3 ginger sliced
    1 head of garlic
    1/3 of one carrot
    1/3 of one onion
    cabbage
    1/3 of one apple
    2/3 of one potato
    Goyokai Dashi:
    600ml water + 60g Niboshi

    1.5L water

      Real ramen as made in Japan, not the cheapo noodles made for college students and people on food stamps. Though if you're in college and/or on food stamps, you can make authentic Japanese ramen (or something close to it).

      @@canaisyoung3601 I mean, a few years ago I went to Japan (Tokio) a bunch of ramen over there also isn't godlike or anything, I mean if you take a good instant ramen and you throw in half a beef stock cube and a boiled egg you basically beat the taste of a bunch of the regular Japanese ones.

      Not really most Japanese animes eat Raman for example DBZ and Demon slayer every anime has Raman atleast in one episode so I'd say anime in a whole opened people to ramen

      I tried Tonkotsu ramen a bunch of times, it was never great!
      Tonkotsu ramen is fuckin hard to master, don't trust anyone who says he made an amazing one the first few times.

I was living on the Aina and my gf and I, when we lived in Hawai'i...she is always talking about how she wants to go back to Hawaii because she never stops talking about how good the ramen and Chinese food was, especially local grinds. She was especially shocked how different the Chinese food was compared to here on the mainland.

    Just discovered your channel but I admire your honesty about how your food turns out and your passion/dedication for what you clearly love.     This video better get views. I've been watching you for awhile now and you're one of the very few people on this platform that really dedicates themselves in Ramen.
    And making an Ichiraku Ramen video is something I've been waiting for you to do. Nice!
    *One thing I remember though is that Naruto actually hates menma, mentioned once in a filler episode. It's weird 'cause the ramen is always depicted with the menma as toppings even on his bowl.

    I thought naruto just like a simple tonkotsu ramen, and the only thing I know about the story behind his favorite food are because the creator, Masashi Kishimoto love eating ramen in his youth and have spesific restaurant that became his model for Ichiraku. Anyway great content!

      Every single time naruto orders ramen it's miso chashu omori, or tonkotsu miso chashu. Maybe that was kishimotos local version of tonkotsu that he had growing up.

    Well, now that I figured the recipe, I can make a kosher alternative for me to enjoy.
    Ukotsu Miso Chikin Chashu.
    Beef bones would have a similar richness while chicken thighs would work well as an alternative chashu meat.
    I could also have went with Shio broth but that involves quite a bit of fish, but it could also work.

    When i was working in a ramen shop, they added sesame paste (canned with its oil) around 3/5 tbsp of that into what you mixed in the video. Makes it a bit nuttier

    May I recommend putting thick cut cold chasu pork on a hot bowl of miso pork ramen, I had it in Sapporo and never forgot it legendary taste
