    I just set up my homemade distiller. I was using lemon peels. I barely got any oil out of them. I used about 12 lemons and chopped up the lemon peels. I put about 1/3 full of water in a 6 L pot. I set temperature about medium high. Cooled water as it went through copper tubing. I got lots of liquid but only a light few drops of oil. Was I to steam them on a lower heat? What could I do to extract oil better next time? Or do I need more lemons?

      It is not necessary to dry rosemary before extraction. However, for infusion and tincture cellular water will comes out from fresh rosemary during soaking which can dilute your extract. For rosemary, there is over 60% of water mass in the fresh herb. Drying can help reduce dilution. Again, drying is not necessary but it can help you get more concentrated product.

      Both dried and fresh can be used. Dried has less moisture so it can make more concentrated products.

    Can we leave the bottle with oil with dried rosemary under direct sunlight for the infusion method for a few weeks. The only concern is if the sunlight will oxidize the oil. But I’m only looking for external application on the skin and scalp. Not for consumption. Please advise. Thank you

      It is good to use dry rosemary with oil but avoid sunlight. The UV light in sunlight can deteriorate oil. You can put the bottle in cabinet in kitchen. The little bit warm can help your extraction.

    @Dr. Kwok, the infused oil requires 4-8 weeks of time to infuse, *but,* if you use a double boiler, how many weeks do you have to wait? Your explanation forgot that information.
    .....Also, *if you use a double boiler, how much cooking time should we use??* Thank you, sir.

      Hi, with double boiler the time can be saved into 1-2 weeks. Normally the slow cooking will take hours. Longer slow cooking time can save your soaking time after. Or the oil can used right after. Difference is slow cooking can help extract most of essential compounds out and the rest will be extracted during regular soaking.       Yes, dried rosemary works perfectly for making tincture and infused oil. They are more potent and have less chance go bad than fresh ones due to its less moisture content.

    Does heat denature Herbs? Is it better to cook with oil or hot water?

      Herb essential compounds have fairly thermal stability and can tolerate heat. Boiling water or steam won’t cause damage to mostly compounds. Boiled Oil has higher temperature which could have some irreversible effects on some compounds but more compounds have higher solubility in oil than water. If oil is going to be used, either use it at room temperature or heated up at low heat without boiling. Hope this answer can help you. If you have further questions please email me.

      Cold press is used to citrus peels to squeeze out its oil. Rosemary is not using it.

    Do you have to store that olive oil rosemary in the refrigerator? Do you have to worry about botulism? How long will this keep?

      Pure olive oil with dry rosemary can have a good shelf life without saving in refrigerator. If fresh rosemary was used, moisture in the plant could go into oil and that could cause problem during storage.

      They do but with different amount of oil being extracted. Tea has the least because of its low solubility of oil and low temperature. Oil and alcohol has more oil being dissolved in them.     Hi! l didn't get the first way exactly. In the first way that is infusion heating is necessity or not?
    What that I,ve got is that we should soak the rosemary needles into olive oil and put it away for 8 weeks. After 8 weeks we can use it. But if we want to use it immediately we have to haet it. Am I right?

      Hi, room temperature is the common way for making infused oil. Heat up can help shorten time but don’t go beyond 140F. Otherwise you will lose their essential compounds. By heating up for example in a slow cooker at low heat, you may use it after 24 hours or longer longer time.

    Can extraction of Rosemary with tea be used as organic preservative for food like other rosemary extracted?

      Rosemary oil has been used as food preservatives. It’s tea doesn’t contain much oil and functional compounds because tea is not efficient to extract.

      It is a good idea. However make sure the oil don't go into eyes and test there is no allergy reaction.

      When using oil infusions it is better use dry because moisture in the fresh herbs can make the infusions go bad earlier.

      Pure essential oil is not recommended for internal consumption including rosemary oil. Rosemary hydrosol can be diluted for drinking.
