    Happy Chinese New Year! I've had this one before with my friends. It's a very typical thing to have baijiu with BBQ or hot pot. Basically there are four main types of aromas in baijiu: jiangxiang/sauce aroma type (酱香), e.g. Maotai; qingxiang/light aroma(清香), e.g. Fenjiu; nongxiang/strong aroma(浓香), e.g. the one you tried here; and mixiang/rice aroma(米香), e.g. Sanhuajiu. There is another one in strong aroma category that I really recommend (and also one of the most famous), Luzhoulaojiao Touqu 泸州老窖头曲. Since sorghum is the main ingredient in most types, and the traditional fermentation is done in solid-state using qu/grain culture, plus the aging is usually done in clay pots, the flavor is very different from canadian/scoth/bourbon/irish whiskies.

    Both Mandarin and Cantonese! I’m impressed. I have to admit that I’m not a fan of this spirit but I indulged in a little too much toasting on the first few trips to China.

      Hi 3HHemp - I figured it would be a crime not to use both(realizing there are tens more peoples in China I am neglecting but…)
      It is so different. I can see why too much toasting could diminish ones taste for it!

      @@WhiskyWhistle In the Guangdong Province I heard Cantonese spoken often. I think it’s common in many large cities, especially further south and definitely in Hong Kong and Macau.

    Been looking at getting into Baijiu. Only had one (Yanghe Daqu) and it intrigued me. Any recommendations?

      Thanks for the comment! From what I can see the Yanghe Daku is also a “strong aroma” baijiu so you might like this one if you see it. Here’s a nice resource to explore that kind and the other categories of baijiu!
