    You are correct sir, flatheads are best eating. Though they have many names depending on where you’re at… Flathead, yellow cat, Opelousas all the same fish. They are not as plentiful as blues and channels in Texas. You do have to trim catfish fillets and take all the “bloodline” off or it will taste funky. If trimmed and cooked right I’ll put catfish up against any fish. 👍

      Cut the gills, and put them upside down in a bucket to bleed them, and then it's not to bad.

      Cutting the mud viens not even necessary. Just marinate the meat in Italian dressing or buttermilk .

      @@reformedgringle bunch of the bigger flatheads have a half to an inch of red across the entire fillet. I’ll pass on the soaking, way easier to trim them. To each their own though.

    As catfish are voracious crawfish feeders,they often use their noses to flip and disturb the larger rocks they live under.A fleeing crawfish may be sucked in along with some small unwanted stone debris.I believe the natural adaption of the nose shape for shovel head and flathead cats is designed for getting under the edges of these rocks.A quick torquing/twisting motion turns the rock over.I’ve caught many of these,using crawfish,with scarring on their mouths from this activity.

    Well done video sir! i love that you show how to use all off the catfish meat on both species. Soaking channel cats in salt water a great tip. I eat a lot of channel catfish. For me, the bigger the better. Another tip for channels would be to cut out the blood line of the channel. Makes a difference (sometimes) - depending on where and when they are caught.

    Phil Robertson cuts diagonal up behind the bottom back fin to bleed them before they die and the meat is pure white. He said they taste much better when done that way. Next one I get, I'm gonna try it that way. Great vieo, thanks for showing us!

    I believe that catfish, like many 'striking' fish, tend to expand their gill covers, creating a little bit of a vacuum that helps draw prey into their mouths. If this be so, the cat may have been going for something hugging the bottom and got some loose bottom material along with the prey. What do you think?

    I've caught them with 15 to 20 clams in there belly. The acids kill the clam, it opens up, digested clams are the regurgitated out. Those piles of clam shells in shallow water are were the fish get rid of them

    Flathead belly is the best. A ten pound flattie will yield a good bit of meat for frying or stew, but IMHO if you don't blacken the belly on a grill you're missing something.

    In my region flatheads are more abundant than channels. But the channels rarely get as big as yours. But the flatheads are probably the apex predator in most lakes. I catch them often while fishing for Bass. Sumtimes they will eat gravel or dirt if they have a stomach ache. They will carry the rocks for sumtime, the rocks help grind up the bones, feathers etc.

    up here we have river muscles and when you catch a catfish from the deepest part their bellys have nothing but dozens of muscle shells in them. some of them half as big as your hand. either way its official....now you got to come down and do a blue vs bull vs channel vs flathead vs scaly cat lol

    The catfish have rocks in it so it can help its buoyancy it's something in nature that makes the catfish swallow the rocks like I said it is for buoyancy

    I thought this was easy as a flat head has a flat head and a channel catfish lives in the TV only on certain channels.
    Edit: I think it ate the rocks because of a simple case of misidentified prey. I've caught bluegills and trout that have eaten really small twigs floating in the water or leaves

    That’s a lot of meat. It’s funny you have fish like that and up here we get excited over a 14 inch brook trout or a 20 inch salmon that’s got less than half the meat as those catfish.

    If you like chicken and turkey livers don't discard your catfish livers from that size fish and up. They are really good. You should try some. Raised around the obion river bottoms of West Tennessee and have eaten catfish and their livers all my life.

    Some ducks (technically is type of dinosaur, evolution-wise) swallow stones to help them break open shellfish. Dinosaur fossils are sometimes found with these "gizzard stones". It could be that these catfish swallow shellfish, and grind the stones into them to release all that shellfish goodness.

    I lived on a lake in Eastern N.C. that's full of cats. We would catch lots that I thought were channels or blues except these cats had a straight tail not forked. They weren't bull heads or flat heads. They were silvery gray and we caught them from a few lbs to 15 lbs and bigger ones are there. What type cats were we catching? Thank you.

    Every time I’ve eaten flatheads, the meat always has a mushy texture. I prefer blues and then channel. I always throw flatheads back. Is there a way to prepare them where the texture isn’t mushy?

      Only the little ones have been mushy for me…… I smoked a 20 pounder and it was good! We haven’t had any bad flathead.

    If you don't want the catfish to slide you should put salt the salt will stay in the skin and it will be easy for you to skin it I won't slide around I'll be perfect

    I never understood why ppl skin first then fillet. I just fillet. I even fillet that gray skin off of the inside of the belly meat. If you bleed and put on ice they clean alot better.

    I heard that wild catfish have very strong smell due to the fat in between the skin and the meat. So by getting rid of that fat layer there will be no smell, is it true? And please advise on how to get 100% of that fat out of the fish. Thanks.

      That depends on how old the fish is and where it’s caught. I honestly don’t usually have to trim anything off. I highly recommend that you go fishing and try it! Don’t depend on what people tell you. Try it yourself! People are crazy!

    I just found this video. I am curious as to what you do about the pin bones, and the mud taste when cleaning them. My understanding is that one is supposed to cut the center blood vessels off and make smaller fillets so it gets rid of the muddy taste.
    But I haven't seen anything about how to get rid of pin bones, which drive me nuts when eating fish that have them.
    Also, any recipes for non fried catfish? (Diabetic, so fried foods are something I should only do a couple of times a year).
    Thanks if you are able to take the time to answer my questions. I am still learning when it comes to fishing after a trauma issue as a kid around doing it.

    is a blue catfish the same as channel catfish.

      No, it is not. The blue cat, the channel cat, and the flat head are all three very distinct species.

    Difference between flats and others. Flathead taste the best. Like Channel, blues, they can taste good to a rank and nasty. A flathead tastes delicious to good.
