What are Morita Chiles?
Morita peppers (or chipotle morita) are a type of chipotle pepper, originating from Mexico. They belong to the Capsicum annuum species, which includes a wide variety of peppers such as bell peppers, jalapeños, and cayenne peppers. Morita peppers are ripened red jalapeños that have been smoked and dried, similar to chipotle meco (but not the same.) And, as such, they share the same medium heat range (2,500 to 8,000 Scoville heat units) as a fresh jalapeño. Morita chilies have a delicious smoky, sweet, and earthy flavor that works quite well with Mexican cuisine, barbecue, and bold meals. Learn more at pepperscale.com/morita-pepper/

Weigh your water in grams (1 cup of water weighs about 236 grams)
Multiply 236 x 0.025 = 5.9 grams of salt
For 1 Quart of Brine:
944 grams of water x 0.025 = 23.6 grams of salt

did i miss something? how did it go? dead curious. here in Scotland it's dried chillies or you go without so i'd love to know if it worked out well.
