6 C coconut meat, 1/2 C lemon juice, 1 Tbsp coconut oil & 1 Tbsp coconut butter, 1 Tbsp vanilla, 3 drops liquid probiotics, let sit outside for 24 hours in a warm, 75, dark place uncovered cuz it needs to breath!

I have been making a gallon of fresh coconut from local tree harvested coconuts here n Hawaii for over 46 years now...older coconut works but has to be strained well,,, middle aged is the best. When i was visiting in New Zealand and wanted to share the recipe about 25years ago I used canned coconut cream (unpasteurized) and it was fine....so go for the available inexpensive medium. The issue with thai coconuts is the DIP in bromide which is what colors the skin and water....I have planted over 20,000 coconut trees in 50 years but I would say that when fresh good quality is unavailable there are options these days and frozen meat and cream is easily available even in supermarket....I have been 100% raw vegan for 48 years by being flexible in certain situations.....

Markus, this is by far the best coconut yogurt that I have ever tasted - I just made a batch yesterday and I SIMPLY LOVE IT! I couldn't believe how incredibly easy it was to make! My 12 year old granddaughter has been having some severe stomach issues and I took her some to try. She can't have dairy (I no longer do dairy at all) and I think this will be perfect. Thank you so much.

Hey Markus, you should use your dehydrator. It makes great SCD (selective carbohydrate diet) yogurt. Ferment for 24 hours between 100-110 degrees Fahrenheit. Powerful stuff, great video by the way.

Why vanilla in natural coconut yoghurt? Add any flavors depending on what you are using it for. If you make it plain you could use it for sweet and savory dishes. The texture looks amazing. It has to be delicious. Thanks for sharing.

@yohkom The kind I use in the video is from Ascended Health, but I use all kinds. I use a lot of home-made kefir (I'll show how in upcoming video) and I buy whatever liquid kinds I can find in the health stores. I mix n match because the body has hundreds of types and most store brands only have half a dozen strains.

Oh! some places have a lot of mold spores in the air so I would recommend covering it with a paper towel or cheesecloth and big rubber band. It gets plenty of air that way, but I just make mine in mason jars and seal them. Works great, just 10 to 20 hours depending on room temp. but if left too long the CO2 builds up pressure so be careful.

Probiotics, unlike most bacteria live in an acidic environment (your digestive tract). Acids do keep most of the other bacteria and pathogens under control. For example, Candida yeast thrives in an alkaline environment (opposite to what most of the Kangen hype wants you to believe)- acid shuts off the yeast growth gene. That bit of lemon juice is just fine :-)
