You should definitely cut the tops of the circles off on the non-gear side so you don't have to try to thread 2 needles over a bed of hot coals. It wouldn't be as aesthetic, but you wouldn't burn your hands trying to add or remove the food.
Remove the lower sprockets and run the chain over and under the upper sprockets. Each spit will rotate in opposite directions. Less friction and load on the motor. That's how my hot dog cooker works. As the spits rotate, there will be less interfertence with the food going against the rotation of the adjoining spit. Other than that, it's a really good BBQ rotisseerie.
