Assalamualikum bhai, mashallah good one, however, some amendments can make your recipe more authentic. For shami shikampoor you dont need to take so much oil, it is because you have taken full egg with yolk (zardi) thats why so much of foam/bubbles in oil, instead, you can add raw meat while grinding which will not only enhance the flavor but also helps in binding. Doosri baat bhai paper towel may nikalayto thoda oil absorb hojata tha.

Then you can please skip it... egg just adds etc taste... if egg white is ok for you then u can add that... else you can go ahead without eggg.. there will be not much difference in taste..
