ℹ️ With the ingredients listed in the recipe you get about 12 delicious patties.
🥣 Ingredients:
3.5oz | 100g | 1/2 cup red split lentils
7oz | 200g | 1 cup rice
8 bell peppers
15oz | 400g | 1 can chopped tomatoes
1 onion
3 garlic cloves
🥣 Seasonings:
1/2tsp Korean chilli flakes (Gochugaru)
1/2tsp turmeric
1/2tsp ground cumin
salt to taste
16oz | 500ml | 2 cups vegetable stock
chopped parsley
🧑🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗You can substitute Korean chilli flakes (Gochugaru) for crushed red pepper flakes or cayenne pepper.
🥣 Method:
Cut the bell peppers top off
Remove the stem and seeds
Place on a baking dish
Chop 1 onion and cook over medium heat on a lightly oiled pan for 3 minutes
Mince 3 garlic cloves
Add 7oz | 200g | 1 cup rice, 1/2tsp Korean chilli flakes, 1/2tsp turmeric, 1/2tsp ground cumin and salt to taste
ℹ️ Feel free to add your favourite herbs to get the flavour you like
Stir in 16oz | 500ml | 2 cups vegetable stock
Add 15oz | 400g | 1 can chopped tomatoes and 3.5oz | 100g | 1/2 cup red split lentils
ℹ️ You can use any other lentils you have available
Mix and cook over medium heat for 20 minutes
Add chopped parsley
ℹ️ Do not worry if the rice half cooked as it will be fully cooked in the oven later
Fill each pepper with the lentils and rice mixture
Add 2oz | 50ml | 1/4 cup water and cover with wet parchment paper
Bake in the preheated oven at 350F | 180C for 30 minutes.
Serve with the dairy-free yogurt or sauce of your choice and enjoy!

I love this idea. I already use your soaked lentil recipe for stuffed peppers but I'll be trying the red lentils soon. The flavor will be more mild and the texture more tender, I bet. Also thanks so much for the wet parchment tip! I have a few open casseroles I use and that's the perfect solution.

The lentils were boiled for 20 minutes and baked for 30 minutes. That's more than enough.

I love the cooks simplicity and the good clear recording, and I liked no talking or music so I coukd concentrate. I'm vegetarian, so I love that there isn't any animal products used. I have high acid , so wouldn't be able to use those spices or tomatoes. I make hummus, and its the only thing i like cumin in so far. I love cooked onion, garlic, lentils and wild rice, and maybe would add red beans and seasoned tofu pieces.

Rice?? Normally the rice we use is White either short grain or long grain.
This has black pieces in it and didn't look anything like our White rice. Color is Not at all light.
So please don't just say
Rice, when it looks so foreign and we Don't have any idea what kind of rice that is.....
Makes it hard to buy items for the recipe or to even know how to make it.
