This dough is much stickier than wheat flour when kneaded, so it is a good way to knead ragi flour.

If you are not comfortable with rolling then you can use cling wrap, 1. Take a cling wrap cut into a square piece. 2. Pour a few drops of ghee over it and now take a dough ball and place it on a cling wrap and press the dough ball with your fingers and give it a round shape.

Can we make momos from the same dough?
To be honest, I did not try to make momos from this dough and I did not even eat them. But yes, you can make momos with ragi flour.
To make momos you have to use different process to knead the dough, I mean ragi flour does not have binding properties so you have to add other flour for binding like wheat flour or rice flour .

Ghee makes the roti soft, you mix ghee in the flour.
