    I appreciate the detail you go into regarding your thought process as you approach different milestones in the roast. I'm interested in espresso with sweeter/caramelized notes over acidic/bright flavors. The darker roast might be more where I'm leaning. The advice you and the rest of MCR give to new roasters is truly appreciated by this "almost new" roaster. Keep the videos coming as they are of tremendous help.

    You guys are great! Love your videos, very informative. I'm a bit confused as to your references to your gas and fan adjustments, tho. When you say you adjusted down by 50% I'm not clear if that's 50% from where it was prior to your adjustment or 50% overall. There seems to be references both ways.

    Just read your answer below. I’m on a small air machine so the beans are always trailing the incoming air. So what you guys do only helps to learn the principles involved. I get FC at 404ish. Assuming my TC is calibrated.

      Nice meeting you and your brother at the Intro to Commercial Roasting class last week. That's a pretty sweet roaster you guys bought. We went with the 500g for home roasting. Can't wait for it to arrive!

      Michael Kay I’m home roasting with the 500 g machine and definitely love it. One thing I would suggest is to measure the actual rpms of the drum if you’re playing much with that setting. I found that it was not nearly as linear as I expected along the dial settings. For my machine, at 100, the rpm is 97, at 50 it is 82, and at 40 it is 65. It wasn’t until I measured it with a digital tachometer that I realized this. Something to keep in mind anyway.

    I fully appreciate you and Joe. Just one question: would you consider adding cupping? I know it would be a nuisance but how can one consider not including the cupping? And yet NOONE does…

    You extended all phases of the roast for full city and beyond. My question is: What would be the difference between the way you did it and just roasting all phases to the same time but just roasting longer at the end for darker roast?

    I noticed that you are not using a full charge on the machine and a lower charge temperature compared to your other roast alongs. Is there a particular reason for that??

    Are you using the bean probe or the environment probe when you decide the charge temp?

      They should be the same if you allow your machine to reach thermal equilibrium (stabilize). Your bean probe will only read different if you haven't properly heated up your machine.

    Are you guys getting a positive pressure out of the magnehelic? It looks like it is plumbed to the upper port? Do you ever see a negative pressure?

      Positive or negative is simply a matter of the port choice. It doesn't matter which side you use.

    When you call out temps as in end temp 420 are you talking about ET or bean. Seems too high for BT.
