pesto to serve (optional) ( • YOU GOT ME at oven doe... )
Directions:
1. Preheat the oven to 375F
2. Blend the cashews with 3 cups of water in a high powered blender until liquified (if you do not have a high powered blender, soak the cashews in water overnight)
3. Chop the broccoli into bite sized pieces. Slice the cremini mushrooms and plantbased sausages. Transfer to a large mixing bowl and toss with a dirzzle of avocado oil
4. Toss the veggies, then transfer onto a baking tray lined with parchment paper. Spread them out, then bake in the oven for 25-30min

7. Season with salt and pepper. Add the dried oregano, celery, and carrots. Sauté for another few minutes
8. Add the red bell pepper and sauté for another minute. Add the 1L of water (or unsalted vegetable stock). Add the nutritional yeast and give the pot a stir
9. Turn the heat up and bring to a boil. Then, turn the heat off and transfer in the roasted veggies. Pour in the cashew cream while stirring
10. Add the corn and turn the heat to medium. Give the pot a stir and warm up the soup for a few minutes

Hi Wil,
Love and your recipes!❤ Just wanted to see if you could tape a recipe making red lenti tofu.❤
I really appreciate how humble you are despite of being obviously talented and artistic. You've inspired me to cook healthy.
We are making one of your recipes. Thank you for sharing your gift, knowledge, and beautiful energy... and inspiring us all🙏🙏🙏🙏
Hey Yeung Man, I can't explain how helpful your videos have been. I've been suffering through a bout of depression recently, and through your chilli garlic noodle recipe, found a new passion; cooking. I use to do it as a treat for myself, but now I barely eat frozen food if I can avoid it, I'm always in the kitchen either making something I'm comfortable with, or through your videos, trying something new. I cannot thank you enough for your easy to follow and relaxing videos that have made me find a new passion :)
I am absolutely delighted to hear that we are cooking together and knowing how much you are enjoying ☺️ Keep well!
💚
I love cooking with,Miso Paste,when I cook your soup,
❤
👍✌️
I love how you add creaminess without dairy and extra protein without meat... I will absolutely make this for my vegetarian child...
They are in for a treat! Happy cooking 🙌🏻
Dairy not really good FIR MAN ITS HIGH IN ESTROGEN.
SOUR CREAM IS THE largest .
Chicken tender...strawberry peach and sesame are not good fir male potency
LOVE the idea of roasting the vegetables as opposed to putting them in the soup to 'boil' to cook. AWESOME recipe!! Thanks so much😍
It really does help enhance the flavours 🙌🏻
Yes! It's also much better than frying, because you can control how much oil is added. Excellent!
Me too , great idea more flavour as well ..
Yassss❤❤
I just made this and my husband and I gobbled it so fast! I have leftovers thank goodness because this is DELICIOUS! a keeper and going in my repertoire. This was my first time making cashew cream and you’re right, now I can cook with confidence! Thank you Wil!!!! You are an amazing cook.
Could not have described it better. A game changer of a soup.
Wooo! So great to hear 🙌🏻🥳
Hi. What would you suggest as a second for this as a starter.
What did he add after the water as I can't understand him ? Thanks
@@angelaberni8873 It was nutritional yeast. FYI - the recipe is in the description.
Definitely on my list of soups to make for my Shabbat family! It's gonna be a master hit!
Nice! Get that hitter! I'm smiling just knowing that your family will soon be fed from head to tow. Your a true jem in a world of rocks.
שבת שלום. 😊
You are all in for a treat! Happy cooking 🙌🏻🥳
What can I use instead of cashew cream?
I'm out here hunting for Passover recipes for my brother in law❤
Well I made this soup tonight and despite my budget been very tight which meant I had to make a couple of substitutions with the milk and plant based sausages, I can say it was absolutely delicious. My husband is English and if he enjoys a meal he will say “ well that weren’t bad” or “ rather tasty” in his book that is high praise . tonight I got a 9.5 out of 10. 😮😮😮 Winner winner soup for dinner.
Ok so I’m making this soup for dinner again tonight, it’s still cold in my part of the world and I can’t wait. 😊😊😊
Hi. I didn't understand what he added after the water. I rewinded it 4 times.Help please .
@@angelaberni8873 hi Angela, if you keep the video small and tap on the word more that is bolded under the video, a description column will appear on the right hand side, again click on the word more and the recipe will appear. Hope you can find it and enjoy the soup as much as we did.
My favourite chef that I’ve learnt so much from, you’re such a great teacher
Wow! You are so kind 🙌🏻 Happy cooking
Finally a properly paced cooking channel that doesn't make me feel like the host has drank three pots of coffee.
This soup looks so amazing, can't wait to try it.
Welcome and happy cooking 🙌🏻
I made this yesterday for my family and me and them loved it! I didn’t have exactly all the ingredients. I substituted the broccoli for cauliflower, and seasoned fried tofu for the sausages. I didn’t add celery or bell peppers. In addition to the onions added to the pan, I added 1/4 cut onion to the cashew milk, and added basil instead of oregano. It was sooooooo good, rich, creamy and flavorful.
Thank you!!
Glad to hear everyone enjoyed! 🙌🏻😎
just love your calming voice, simple instructions, no unnecessary chatter...really great when u r old, and easily confused...and the recipes r great! 🙏💗
I am overjoyed at the way you love the dishes prepared with your own hands Yeung Man (referring to this latest masterpiece as Angelic) as well you should be because you definitely go live in the kitchen! I'm so excited to try your new creation.
This looks amazing, like seriously so healthy! I can see this as a main course, just soup & bread, or pour the soup over rice too!
Absolutely 🙌🏻🙌🏻🙌🏻
Maybe get a round of crusty bread and scoop out the center to make a bowl, then serve the soup in it?
@@allisonshaw9341 Oh, yeah, this would make an amazing bread bowl soup. 😁
It's so relaxing and comforting to watch you cook💛 and I love learning about all the different types of food you make!
I watched this video yesterday and the soup is currently simmering on my stove. I made a few substitutions (zuch for brocolli and lions mane for cremini, varied pepper from the garden we just put to bed for the winter) and it smells amazing already. I'm looking forward to more of your inspiring videos! I've shared this with my fb friends and I know many of them will give it a try!
Everything about your utube site is amazing!! You, your organizational skills, the way you have your kitchen set up, your awesome recipies and cooking skills! I also love that you explain things so beautifully simple and have fabulous music playing softly in background! Thank You, Wil for all you do!! Kutztown PA USA
Oh my goodness. This looks AMAZING! I can’t wait to try it. Thank you 🌺
My gosh, this is a lovely, warming, healthy and comforting soup! My husband and I are vegetarians, but neither of us like the taste of plant based meats, so the only change I made was to add some spices that would normally be found in sausage, like fennel, thyme, sage and a little cayenne. Thanks for the suggestion of pesto as a garnish. As it happened, I had some pesto in the freezer from last year's garden batch. Thank you so much for this super delicious addition to our weekly rotation!
This looks so delicious. It’s on the list for my menu this week.
Woooo! 🥳
Everyone’s so creative!!
Look so good and very healthy ❤
I appreciate you and the brilliant effort you put into this channel.
That is so kind of you ☺️
It is very subtle, yet I always closely watch you take the first bite and love the expressions you make. I can really tell how much you enjoy the food and how proud you are of creating something so delicious :D
☺️
Wow - this is so inspiring and i can't wait to learn from you!
This came out really good! I added more nutritional yeast because mines was more soupy but after that with pesto. Yum yum! Thank you! ❤
Food for the soul - this presentation from start to finish is completely dreamy and calming. I wish I had a bowl right now, looks so good, definitely making this! 🤤
Glad you enjoyed it! 🙌🏻
This looks like a marvelous soup! YUM! Will give it a try this week! Thank you my favorite chef!!❤😊
Excited for you to try it out 😎
"Heartwarming and comforting" yes, you are, Chef, and that soup looks good, too! 😊 Appreciate your healthful approach to cooking.
A work of art! Thank you.
Great idea for a light Spring supper with a salad and fresh baked bread. 🥘💖
I like your style 😎🥣🥗🥖
I have recently discovered your channel and love it and your recipes. Watching you prepare and cook is, I find so relaxing and calming. The gentle background music, and the way you so gently and carefully prepare the food for cooking is just amazing. Thank you so much, even if I don't cook enough just watching you helps my anxiety. Cheers from Australia. p.s. love the soup recipe .
Happy you are here and to be cooking (or eye feasting) together 🙌🏻👨🏻🍳 Keep well
Yes, such beautiful colors! Looks amazing.
☺️🥣
I haven’t been around to see your great jewels this is lovely on my list to for this week thank you so much.
I love that you're modelling healthy yummy cooking for yound men! It's such a vital life skill. Too many people I've known have not known how to cook. I was taught it's important to make one good meal a day for oneself. Cooking for others (and being cooked for) nourishes not only our bodies, but our hearts and relationships. I think it's important for bonding, because I've noticed the difference in relationships when shared cooking happens vs when it doesn't.
My hubby got diagnosed with diabetes. I'm vegan .. he's not. But after his diagnosis I (and dr) told him he had to change his ways.
I got rid of every bit of unhealthy junk food and put him on a healthy diet. Yeah 20+ years and i want at least 20 more!
He lost 60 lbs, feels better and few times a week he helps me prep veggies and stirs what's on the stove. lolol
Cooking together definitely brought us closer in new ways and I don't feel like just a housewife/cook.
He's not 100% vegan... yet, but I'm getting him closer every day.
Will, I just made this soup for tonight's dinner and it is pretty yummy! I was a little hesitant about not having a food processor for the cashews. It would have been smoother if I had, but to be honest, once you're into the eating part you don't notice. I'm enjoying my second bowl as I type! Thank you for this recipe
I have soaked cashews and then chop them up. I used my baking hand held mixer for years before I got a standing blender. If you have one.. used to be pretty easy to score a nice one and even a blender at thrift store. No it won't be vita mix brand.. the thrift stores have gotten slim pickins n some expensive. I live in a small city .. too small. Just a thought because I've been there and definitely miss all the great appliances in almost new condition I could score. I say .. ain't no shame. Lol.
I just had a thought: How about chopping the cashews and (hot) water but then letting then soak afterwards for a half hour or so, and then blending again? I bet the result would be much creamier. I do have a Vitamix but I always presoak my cashews a bit anyway. Just "feels" like they will be creamier that way.
@sarahdee374 good advice.. thx I need all the help I can get !
@@SuntoSet77 are you aware that Vitamix sells reconditioned models? I think that would be worth checking out. I've had mine for about 20 years I love it! Best wishes in your cooking journey
Heaven in a bowl, beautiful narration, I can't wait to make this!
Made this today and it was so delicious, shared the recipe with family. It’s definitely on my favourites list, thank you

I've just made this soup. It's heavenly good! Thank you for sharing your recipes with us!
5:17 "take them out of the oven and try not to snack on them too much" Wil how did you know this always happens to me 😂💀 I'm definitely putting this recipe in my soup rotation. Looks so satisfying.
🙈😆😎 happens to the best of us! Enjoy
I got a kick out of that too! Like how did he know?! lol
This recipe is absolutely amazing! I cook oil free and modified your recipe and did not include the sausage and pesto and this will be on repeat forever! Thank you for alwasy sharing your passion of cooking!
Great to hear that it worked oil free and happy you enjoyed 🙌🏻
Lucinda Lowe - I was thinking the same thing! As a new wfpb eater, thanks for confirming! I ❤your channel Will!
I just wanted to let you know that I made this soup today, and it was delicious. This review comes from a Western perspective, so the taste of the soup fits well with my taste preferences. Thank you, Yeung, for sharing your ideas with us.
I never thought a soup could sound so poetic! 😻
🤗
Oohhhh, Wil! Thank you. I promise not to snack too much on the roasted veggies!! Will definitely try this soup, but without the plant-based sausages. (Just not my thing). Thank you again, and Happy Sunday! ❤🙏❤
All good to omit and could always make extra roasted veggies to snack on 😁
Oh yeah. Sweet!
I really like this relaxed approach towards cooking. Cooking can be enjoyable. The moment the cashew cream melts into the soup is amazing.
Glad you enjoyed it! 🙌🏻
Bravo👏👏🥰 Thank you for your generosity of sharing your expertise and beautiful descriptions of this incredible soup! Thank you so very much🪴
I just made the soup and it is, indeed delicious and the instructions are so easy to follow. I particularly liked the idea of dicing the veggies (onion, carrot, celery) into very small pieces. It took a little longer but it was totally worth it. The pesto was the final bit of brilliance. Very well done, Sir! Next time, I might roast additional sausage because I wasn't able to follow the advice to refrain from nibbling too much once the veggies/sausage were done. I have no willpower!
😁 It really is the problem with this recipe, too easy to enjoy before it makes it to the pot. Keep well!
Angelic soup indeed! Although there are quite a few ingredients I'm still going to try it because it looks and smells ( I can smell it thru the video.. LoL 😂) divine.
Thank you Will for this delicious recipe. You certainly have a way with words 😊
You are very kind and looking forward to hearing how it goes 🙌🏻👨🏻🍳
Looks absolutely amazing! Thank you so much for this recipe!
My pleasure 😊
OMG that looks absolutely delicious. Cant wait to try this recipe. Thank you.
Re-veni, re-vidi, re-vici…
I made this soup again, this time a double recipe, for a larger crowd. That is a lot of soup. This gave me an occasion to appreciate it to a deeper level, beyond the exciting discovery stage. As mentioned earlier, this soup somehow stays with us and lingers in our brain.
I recently came upon a Korean word which may describe the situation: Siwonhan-mat. The third taste of Korean food.
´ Siwonhan-mat is a refreshing and pleasurable taste experienced through the body rather than by a sense of smell or taste.´
A unique and pleasurable sensation which lingers and is experienced during the digestive process.
Of course I am only a beginner but I thought this was interesting. Consciousness, awareness and appreciation.
That is very interesting and so glad to hear ☺️
This vegetable soup is so creamy and looks really delicious 🤤
🙌🏻🙌🏻🙌🏻
Just made this, it's so easy and delicious. Thank you,Yeung.
My pleasure 😊
Thank you for these wonderful recipes and your clear and calm way of explaining every step of them. This is by far my favorite cooking channel. Greetings from Germany!
It is my pleasure and so glad to hear you are enjoying. Keep well and happy cooking 🙌🏻👨🏻🍳
I'm not a massive soup fan but this looks amazing! Will definitely try it. Thank you for sharing.
It is worth the try 🙌🏻 Excited to hear what you think
I’m not a soup eater either, but this looks yum, I was sold on the soup being a cream soup, it’s a must try for me. Thank you.
Love , love, love your recipes❣️Thank you Yeung Man😊
My pleasure 😊
Dear mr Jerry Savelle, I pray you and your loved ones are super Blessed always. I love watching, all the way from SA.
I made this soup the other day and it was quite nice. I did leave out the red pepper as I didn't have any and was not too happy with my choice of vegan sausage. Other than that it was very, very good.
I love your recipes and I get such a blast out of your puns they're great!!🤭👍♥️ Hey Wil, have you cooked with Pumfu (a tofu like product made from pumpkin seeds)? I haven't tried it yet but I hear a lot of good things about it
Pumfu is good but it's very high in fat.
🏃🏿♀️🏃🏿♀️🏃🏿♀️🏃🏿♀️🏃🏿♀️ me running to find it because I refuse to eat tofu.
No need for him to repeat what has been done in another channel!
@@iyouitry I don't mean make it from scratch like on Mary's test kitchen I mean just use it Incorporated in some of his recipes I'm just curious what he thinks of it.
I have yet to give it a try 👨🏻🍳🙌🏻
Another quality demo. thank you so much for your every effort. Oh, I’ll try your soup too.
Wow this looks incredible
Love this soup idea! I could definitely see crumbled bits of marinated-roasted tempeh as a good protein substitute for plant-based sausage in this recipe 🤔
That sounds lovely 🙌🏻
@@YEUNGMANCOOKING Glad you like the idea! It's something I've tried before with your curried split pea soup recipe as a topping with parsley to garnish -- my husband thought it was delicious! Almost like bacon bits lol. I find it's nice to have a way to sub for plant-meat type things since they can sometimes be pricey or tough to find (albeit super tasty 😋).
Wil, this looks delicious. Perfect timing for fall. Thank you, stay well.
Soup season fav 👌🏻
This soup is like no other! So glad I followed this recipe, though didn't feel like cooking tonight. The making process is creative but simple and result so satisfying. So worth it - thank you.
