Heavy cream can be added cold, if the potatoes are sufficiently hot to where they no longer need to be on the heat. Gives a much milkier flavor for the same amount of cream. Also adding cream last is a good way to idiot proof your potatoes and make sure they dont get too watery or loose.

You should take up canning so you can preserve big batches of potatoes and onions so you can get some speed chopping No kitchen wants someone slow at the cutting board

Sorry to be the grinch but the recipe was the same, it’s the mashing methodology. I’d suggest not to use a blender as it turns into gloop (it breaks down the cells too much). A masher is good if you have a strong arm. I go for the river every time. Oh, and don’t overbook your tatties thinking they’ll be easier to mash. You just end up with watery mashed potatoes. One thing, if you can afford to but proper truffle butter (N0T truffle oil which is dreadful stuff) add a generous lump and you will have heaven on a plate.
