Just take into consideration editions of the Talmud, particularly those from the 13th century onward have been self censored.
To really understand the WHY to everything, you need to find a copy and read it....The Quran and Hadith are light and breezy compared to that. It's shocking but definitely makes things fit into place.

Jesus suffered, the apostles suffered, and Christians around the world suffer so the thoes who have may have the light of the lord in them can be brought back to the narrow road and rejoice in ever lasting life. This is the Catholic interpretation of events, using the apocrypha, but protestant views are generally that the giving of water and spearing of the body were further insults against him, not pity.
The drink would've 'quickened' him (it was Posca, which Romans used as basically an energy drink, so it would've kept him from entering shock and dying too quickly), and the stabbing of the side was a post-mortem act of disrespect.
