  • Dinesh Gale is a cattle farmer who makes chhurpi in Tipling, Nepal. It’s a hard cheese that comes from the milk of chauri-that’s a cross between a yak and a cow. Chhurpi smells smoky and tastes sweet, and you chew it like you would a piece of gum. It is also extremely tough and is considered to be the hardest cheese in the world. People have been making this cheese in remote parts of the Himalayas for centuries. It keeps for a long time-up to 20 years if you stash it in a special yak skin.

    Many Western Cheese expert say this cheese taste the best than any Swiss cheese and Italian cheese but lags behind in publicity.. I have too tasted it and it's the best cheese i ever had. The taste comes from unique vegetation found in Himalayas.

      Well pretty much yeah- but we actually used reindeer milk instead of cow milk. Also storing it in carved bear bones covered with herbs and beer would keep the cheese fresh. Then the cheese was dipped to tar and dried in rare sunlight, also a salt coating was added to make the tar coating shine. After the plasticy layer was added it was time to carve all the details with sharp freshly picked wolf teeth. All the white details were then painted with a mixture of chalk and piss. The glass layer formed accidentally of the carvers sweat, it was kept in for fancy reasons. And to activate the Nokia, they threw it around until it started to glow. Now congrats, you have a classic Nokia in your hands. Uses: Throw it, Shove it up your ass, Lick it or (my personal favourite) use as spoon to stir your last nights beer leftovers together. PERKELE

    During my childhood, mom always told me that sweets will damage my teeth so, she used to give me "Churpi" as a treat before she went to work. Ironically that Churpi even hurts my whole mouth however, the taste was so good that I still love this.

      in order for mammals to produce milk they have to be pregnant, so they're raped, and their babies are killed. so we can take the milk. milk has casomorphin, which makes the calf go back to its mother, it sedates the calf and in cheese the waters been removed so its concentrated, so cheese is physically addicting

      All aged cheese pretty much have next to no lactose in it, the lactose goes away in the cheese making process. (Fresh white cheese have quite a lot of lactose though)
      I get it’s a joke. But a ton of lactose intolerant people missing out on eating cheese because they misunderstood is no joke.

Thats why you see so many cows and bulls in the streets of India and Nepal. They have even "Gau Rakshak" meaning cow protectors, so they are not even killed or you'd get legal action against you. Plus, here the cows are milked using hands and are free to gaze on anywhere they want. Please, learn about the country and culture you try to preach hateful practices with.

    I have so many memories of Churpi as a kid, also sergum .Its an integral part of Nepalese kids life ,especially kids in mountainous district.I miss home so much🇳🇵

      the swiss actually helped the nepalese make the first chhurpi cheese. He has a memorial in Nepal, read the Atlas Obscura article in chhurpi.

    Imagine how much prize these cheese would cost on different parts of the world, US for example, amazing cheese that came out from free-range livestock which ate herbs and plant located on the area of the highest mountain on earth,oh come on,storagable inside a certain animal skin for 20 years? not to mention the type of cow itself, a crossbreed of cow and the yak ,holy cow!     Chauri: "chaur" means field / ranch. If you observe, the yak/cow grazes the open fields naturally and causes "soil sequestration" which not only provides great nutritional organic milk for thr cheese but also helps in absorbing the carbon from atmosphere because the yak/cows graze the natural landscape and also add natural fertilizer for better soil health which helps the grass to grow better throughout the year which prevents drought, retains soil moisture and keeps the ground water intact. Traditional methods are the only sustainable systems i believe.

      Shaik Shaik Not a lot. In the US it comes pre-packed and cut into small pieces.. 1 pack will usually have 10-15+ and it’s around like 2-3 bucks..

    From my childhood days, I've been enjoying churpi, though I didn't fully grasp its value back then. It's truly a nutritious treat, often referred to as 'the cheese'. I extend my best wishes to Dinesh and hope that his future generations will continue this tradition in an even more advanced manner. On the flip side, churpi 😆 can be tough on teeth if overindulged due to its hardness.

    I used to eat this when I was in school. They cut it in tiny cubes and it's really hard but it's so good , it has this savory taste which I can't put it into words.

    I hope there is a way for them to export this cheese internationally. They could make amazing money and increase their prosperity. There should be startups who should make the effort to reach such communities and export their unique products around the world. Given the way they describe the taste as smoky, sweet and tough, I am confident that there will be many takers, especially in Europe and Southeast Asia.
    I am no dairy farmer but is there a way to reach out to this community? Pretty sure that given the properties of this cheese, it could fetch easily between $100-300 per kilo in the international market.

    Nepalese like hard food... first time i went there i tried some ‘rock’ soy beans it broke 2 molars... the buff jerky was fantastic though

      Yes..As per my experience there.
      Their food are dried and fermented in booming season so they could have it in the winter where food is scarce.
