I implemented the magnet and magnetic dry erase board process at Memorial City Medical Center in Houston. It appears to have been a best practice and now used in the AYR program.
I don't know the exact policy in this hospital BUT I have 13 years experience working at one. I'll give what they did at my former job. If you got a diet order to eat and the hospital kitchen is already closed for the day, the nursing staff will offer you a sandwich with a bag of baked potato chips, some juice or soda or whatever beverage, and an ice cream or pudding or sorbet from the nourishment room. Nursing floors are stocked everyday with bare essentials on the fridge like a couple sandwiches, beverages, broth packets, frozen or cold desserts. You can still eat something late in the night but it won't be a hot meal.
