    A small tip for those who only have thin bottomed pans, put a layer of potato slices at the bottom first and then add the rice mixture on top of that. That way, the potato will get burnt instead of rice. And burnt potato is really tasty too 😄 This is how I make biriyani all the time!

    Aside from the delicious recipes, what I love about Marion's videos is that she takes into consideration that she has a worldwide audience. I love that she mentions the different terms for ingredients and that she gives different options for kitchen equipment to use!

    You can easily do this in a rice cooker instead of a claypot too. Been cooking it this way for many years. A tip would be to let it sit in the rice cooker after it's cooked for 15-20 mins and you'll get a delicious crispy rice crust at the bottom!

      My mother was Asian and was an amazing cook. She was a Nazi in the kitchen. LOL! But more seriously, that was her way of both preserving/passing down the precision of the cooking (which was needed) as well as cooking a delicious meal (because it was tied to her reputation - Asian thing).
      I'm sure Marion is probably a little more "controlled" in her strictness, but the same level of precision and discipline of the cooking shows through in every single thing she does.

      Me too lol. I got some white pepper, soy bean paste, chili paste, chili flakes, dark soy sauce, fish sauce, sesame oil etc, and I know how to use them too haha

    I am from Malaysia. Claypot chicken rice is one of the famous food for local Chinese community. And the fact is, we like to eat this with the rice burnt up in the claypot. It make the rice more chewy and crispy. Anyhow, I found Marion's recipe is quite authentic and original, thumb up :)

    Just made this in our rice cooker last night and it was delicious! my little toddler who isn't a fan of mushrooms ate this for two meals back to back! I added carrot and cabbage in mine for hidden veggies and she ate it all without blinking! Tastes even better the next day and that crispy bottom is yum!

    Some crispy, slightly burnt rice at the bottom of the claypot is the way to go. It gives it a smokey aroma, which is what this recipe is traditionally known for.

      @@deboraheden6418 Just keep it on the fire long enough for a thin layer of toasted crispy rice to form at the bottom of the claypot, which you can scrape out. I also like to drizzle sesame oil over the rice once its done.

    Made this last night with a couple alterations as I always do, but it still came out DELICIOUS! Actually used whole bone in skin on thighs and cooked it longer obviously but rice was not overcooked or mushy. Used a 4" deep cast iron La Creuset pot. The house smelled so good and the flavor payoff was so satisfying.

    Marion, great recipe. I love one pot meals. Because I cook for a big family, I cook my rice in the rice cooker, and my chicken mixture in a wok. Just when the rice turns off, I pour my chicken mixture on top of the rice and close the lid for another 10 min. All the goodness of the mixture seeps down through the rice. Yum. Love all your recipes. You explain them so well.

    Marion, I would have added the whole package of Chinese sausage. I love that stuff. I actually fried my package up and ate it by itself in 3 servings. LOL! Now I'll have to go get some more so I can try this dish...mostly because I want to play with the claypot I bought but have yet to use as well as my mini cast iron. Yes!

    I'm a simple cook,I see chicken and rice I click because we ALL have it in our home's all the time.
    EDIT...
    I already know how to cook this 🤣, if you don't have a clay pot after it boils put it on the lowest setting on your cooker and take the saucepan lid and cover it with kitchen towels to absorb all the steam and it will come out exactly like hers... make sure it's on the lowest it can get on your cooker.

    You can still cook this with a normal pot, just move it to the smallest gas ring set at the lowest flame possible after the liquid has reached a rolling boil. It may take an extra 10 to 15 minutes but you should get close to the same result. Oh and add in some dried salted fish, cut into small dice.

      You can also bake it covered in an oven-safe saucepan at 350F for 20 minutes. Bonus if you have a glass lid, you can see when it is done. No fear of burning the rice since you have control of the temperature. Use 1:1.25 rice:water ratio.

    I used to live in China and loved clay pot dishes; I learned to cook them myself. I will give Marion's version a spin in my dutch oven tonight. My humble clay pot is too small to feed the family.

    Finally got around to making this today. I doubled the recipe and made it in a cast iron braiser. I also used 1/4 cup apple juice and 1/4 cup shaoxing wine instead of all shaoxing wine. It turned out great and would definitely make this again! Thanks Marion Grasby 🙂

    I love all kinds of claypot dishes! I have a few claypots but when I am lazy I cook mine in a nonstick skillet. I cook the rice halfway then I top the rice with the ingredients, cover and cook 20 minutes. The best part for me is the crunchy bottom. Sometimes I cook the rice longer just to get the thick crust! Wit the nonstick skillet it just slides right out! Congratulations on the baby!

    I made this today using my Breville Instant Pot. I sautéed the sausage and chicken in the device then added everything as per recipe and cooked using the pressure cooking setting for rice. It came out perfectly although I did add more of the soy sauce and sweet dark soy sauce on tasting it for a more pronounced flavour. Delicious. Thank you.

    I made this dish tonight and it was fabulous! I'll definitely be adding this to my list of favorites. I don't have a clay pot and used a steel pot. It worked like a charm.

    My wife cooked this… and I gotta say that I really loved the flavor. But this is hardly the signature claypot chicken rice. If I removed myself from thinking of this as the classic claypot chicken rice, it’s actually really good, but I’d call it Marion’s chicken-rice-stir-fried-then-finalized-in-claypot, and it’d be a 4.7 out of 5. I doubt very many folks who didn’t grow up eating this would actually enjoy a claypot chicken rice for all its subtle tastes of each ingredient. This recipe is like the opposite of that, completely drenched in sauce and mixed together. Marion’s derived creation is more for them. But it is satisfying. This dish is like my childhood dream come true of what I DID want from claypot chicken rice as a kid bcs my palette wasn’t very refined as a child.

    This is such an easy and pleasant recipe! Made this a few times already, I substituted chicken with beef or pork after the first time. Beef ended up being the tastiest, in my opinion.

    ...hi Marion, following you (and your mom) since a few months ... actually at first cause your videos are epic to watch.and because I’m mixed blood too.. Malaysian ( my mom) and Dutch ... than I tried some of your easy recipes.. they turned out to be easy ànd amazing to my taste buds😋 ... the latest one I tried was the Penang Curry. It is one of my favorite dishes eating out at a local diner nearby with an original Thai chef in the kitchen. A rare opportunity cause I live country side Zeeland, down southwest endpoint from the Netherlands 🇳🇱 which is closer to England than to Amsterdam.. just to give you an idea😉. This recipe I will definitely give a try in the near future. Thanks a lot for all and hope you never stop.. 👍🏼😘👋🏻

    In Malaysia (our version of claypot chicken rice is the shiznit, IMHO lol) it’s much darker and the rice gets crispy on the sides of the pot, so when you’re almost done eating everyone starts scraping bits off the side. Man I miss Kuala Lumpur!

    in Hong Kong, the burnt rice is part of the experience of eating this. It tastes pretty good!

    I remember going to small restaurants that specialise in these claypot rice meals! Back when I was in college in China, me and my roomates used to go eat them, and I actually preferred to have some crusty burned rice at the bottom. They've absorbed the fat from the meat and were so flavourful. I don't have a clay pot, hope my heavy bottom steel sauce pan would work. For the cooking time, is it always 20 minutes? Are there ways to tell whether it's close to being done? I really don't want to burn it...

    i always throw away the water from the dried shiitake. i thought it's dirty. from now on, i'll keep it

      Sometimes it does have some gritty stuff in it so I always strain it through a coffee filter
