- Copycat Hamburger Helper Master Recipe - I call this Copycat Cheeseburger Macaroni Hamburger Helper recipe, a 'Master Recipe' because you can switch out the meat, seasonings and liquid. Then sub in any meat or protein that you want, and compliment any seasoning and liquid to match; just maintain the ratios / proportions. This is a cheesy one pot pasta dish, that quickly and easily comes together for an inexpensive filling weeknight meal. Although this is a copycat hamburger helper, the hamburger helper recipe itself is a copycat of regional recipes like American chop suey, Johnny Marzetti, American goulash, Cincinnati chili, Macaroni and cheese, or Macaroni casserole.
Ingredients:
500g (1 pound) ground beef
10 mL (2 tsp) paprika
2 cloves garlic, minced
1 onion, minced
Salt and pepper to taste
750 mL (3 cups) beef stock
250 mL (1 cup) milk
15 mL (1 Tbsp) Marmite
15 mL (1 Tbsp) Dijon or other mustard
500 mL (2 cups) dry elbow macaroni
200g (2 cups) grated cheddar cheese
Method:
Brown the ground beef in a heavy pot that has a lid.
When the beef is mostly browned, add the onion and the garlic; continue to fry until the onion has softened.
Stir in the paprika, salt, pepper, stock, milk, Marmite, and mustard.
Bring to a simmer, then stir in the pasta.
Cover with the lid, reduce heat and simmer for 5 minutes.
At the 5 minute mark lift the lid, give the mixture a stir and see if you need any extra liquid and test the pasta for done-ness.
When the pasta is cooked to your liking, turn off the heat, stir in the cheese and then recover the pot.
Let stand covered for 10-15 minutes to let the sauce thicken and the flavours meld.
Take this basic framework and switch out the ground beef for sausage meat, or beans, or tofu.
Play around with the choice of liquid, and the spicing.
This method, can be reformatted to many different flavour profiles; just keep the ratios of ingredients.

You're not missing much. When they changed the recipe of Hamburger Helper to make it healthy, most of the flavor went away.
I think a lot of families have their own take on this, also sometimes referred to as American Goulash. I sometimes add some red kidney beans and chili spices to give it more of a chili vibe. There are all sorts of alterations you can make to this sort of dish.

Reminds me of a college favorite, combine 2 boxes mac & cheese, a can of Rotel, and a can of no bean chili con carne. Less than 20 minutes to feed 4 hungry roommates. Now I fancy it up a bit, but still aiming for the same taste, just with better ingredients.
My family makes a version on this and we called it “junk” it is always such a comfort. Just mac and cheese, can of diced tomatoes, onions, and seasoned ground beef.
With ground beef, I'm finding adding lentils in is fantastic... Pantry staple, cheap, healthy, seasons up perfectly with the ground beef to add another 'beefy' texture to the mix. I cook it separately, then add to the browned beef. Would work fab in this recipe.
I should try this. My family (husband and adult son) are resistant to lentils, but if I combine them with ground beef, it might fly. I would happily eat beans (or lentils) and rice 3 times a week, but they are really meat-forward fellas. Thanks for the ideas!

Canadians reproduction is different from American. When two Canadians love each other very much, they apologize energetically. Then the lady Canadian deposits her fertilized eggs in a tent with her ovipositor where her canadian babies can mature through the harsh winter. Then after the snow melts and spring returns, the matured Canadian offspring shed their tent and rove the land, searching for a more permanent wood and concrete structure to create cooking videos and eventually create more offspring.
It's a beautiful and very polite cycle of life.

I grew up poor, but not as poor as my best friend. His mom used to cook Kraft mac and cheese, and then add a can of undiluted Campbell's beef barley soup. It sounds a bit sus, but I remember wishing my mom would make it because it was delicious.
@@raymreed Yep. Both products in full. They had a really big family, with six kids (all boys), so they were only "poorer" because they had so many more mouths to feed. They were all crammed into half a duplex. My friend, the second youngest, would come over to my house for dinner sometimes too. I remember the first time he was over, my mom made a nice pot roast with fondant potatoes and candied carrots (my mom could really cook). My buddy started crying while we were eating, which I didn't understand as a ten year old, but my mom made him feel better. She told me later he was crying because he hadn't ever really eaten anything like that and was sort overwhelmed. He and his brothers all went on to be really successful, even after their father killed himself. Crazy stuff.

@@raymreed We'd call that "Beans and Ground Beef" - it was a frequent at our large table. I have ten siblings, and my mom actually struggled to make small meals as we all left the nest. Hotdishes and food in bulk was all she did for decades.

If serving over a decade in the US Army has taught me anything it's: always get the chili mac.
Chili Mac is always great. My college cafeteria used to serve something like a patty melt. If you add enough pickles and dip it in mustard and ketchup, it wasn’t half bad.

The scrambled eggs may be extra runny or rubbery.
The green beans may be hard or mushy.
The SoS may be extra S (the first one).
But chili mac always tasted the same.
My aunt used to make a version of this with more Latin/Mexican spices and called in goulash. I don't call it goulash, but I toss some corn and sliced black olives and it gives it a more CalMex feel.
Canned diced tomatoes and taco seasoning and canned pinto beans, that is what I add when I make this same type of dish for my family and they love it. So simple, so quick so comforting.

I love hamburger helper! About 6 to 8 months ago I did this very thing, only I made a seasoning blend so I can just keep it on hand to make Hamby Helpy whenever I get the urge.
Good quality cheddar cheese powder (experimenting with freeze dried cheese as we speak to get an even better product.)
garlic powder
onion powder
fresh cracked black pepper
Magical savory goodness (msg)
sweetener
homemade stock powder made in my freeze dryer. Regular stock of course is fine.
Add it to anything as you've stated above and boom, deliciousness!
Not everyone can afford freeze dryer units. Those thing are near $1000 CAD. All I have is a food dehydrator. So I'm stuck with the boxed stuff for broth as it's just something I never have extra of.

Brings back memories when I was a kid cooking some Hamburger Helper before my dad gets home for supper. I kind of burned it. Well, I learned that he says to turn it on high on the stove. lol When I got older, I learned to take it easy cooking. :)

Pretty much like the Goulash Ma used to make. She "doctored" hers up with green peppers, garlic...well, just about anything she was feeling hungry for at the time. I find the dish very comforting too. I'm happy you shared this Glen :)
Thanks Glen! I tried this last night and it was a hit. A word of caution for those that make this dish. Depending on the beef stock you use, it can bring a lot of sodium to the party. I would recommend adding your salt and pepper at the end instead of with the other ingredients to help mitigate that risk. Ours wound up only slightly over-salted and was still very delicious. Mushrooms are a great addition as well. Terrific flavours that take me back to when I was a kid. It will be a new regular in our recipe box.
Aww I loved Hamburger Helper when I was first on my own. Then I realized they all tasted the same and I could do it myself with fresher ingredients. lol Ah adulthood.

Looks very similar to something we often had back when I was a teenager, main difference being we added in some tomato sauce with the stock for a bit extra flavour.

Thank You so much! My husband makes this about 3 times per week. He uses misc. meat, depending on what's available. He adds vegetables from the freezer and a little bit of stock. Neither of us can have alcohol, so we don't add those flavors. However as a go to simple warm meal it can't be beat!

I tried this tonight for dinner & my family LOVED IT! I added a cup and a half of marinara sauce at the end to really enhance the pasta-ness of it and the flavors! Once it was done I also added Italian breadcrumbs on top , as well as a dollop of sour cream and 3 leaves of parsley ! It was wonderful. 🤍🙌🏽 Perfect one - pot dish and it was super FAST! The garlic crusher isn’t lazy. Using pre-chopped garlic? That’s lazy. And is what I do, because it keeps way longer than fresh garlic, and I really can’t be bothered to chop it myself.
Totally! My brand of chopped garlic is literally called Very Lazy! I felt bad using it at first but it's super convenient, especially now that we're cooking more at home
This so much! I have a hard time keeping fresh cloves of garlic, but a bottle of minced garlic will keep in my fridge for months and is always at the ready at a moment's notice!
A fine cheese grater works very well, the long narrow types you can get at some dollar stores, and is much easier than chopping. Yeah you still have to peel the damned stuff but whatever.
Our big ol' jar of pre-chopped garlic last for ages and stays quite fresh. Win.
Yeah I also keep jarred garlic along with fresh, just in a pinch.
All of these comfort foods came from a homemade version which we perverted to make quick and easy and shelf stable....even bread. So good to see the original recipes. Some of us are curious and want to know the origins. Not to mention, we all need some comfort right about now. Thank you.

Glen,I have never had hamburger helper in my life, neverthless, I have made this 4 times in the last month.... Barely measuring after the first time. The difference in what I do, is I add green pepper, don't put marmite or mustard, add onion powder and worcersteshire sauce. Less than half an hour, always great, not great for my 32 year old waistline maybe, but I love it. Thanks a lot

I made this tonight for tea. Living in New Zealand there's a few things I miss food wise. I'm looking forward to food tonight. I miss milk in bags which I reused to put stuff into the freezer after washing n drying. :)
I had to make two pretty big changes. First of all I do low-carb, so I put in a couple of cups of rice cauliflower at the point in the recipe where you put the macaroni in.
I also had no marmite, so instead I put Worcestershire sauce, and a few dashes of fish sauce. Everything else I did exactly the same. It was absolutely fantastic!
I make something similar all the time for my kids! We use lots of tomatoes though and we call it sloppy jalopy 😁
Literally one of the only recipes where I cook the pasta in the sauce. I’ve tried other pasta dishes using the one pot method and they turn out horribly. But these Mac and beef type recipes are great using the one pot method.
