  • Thank you so much for watching these daily vlogs, I had a lot of fun making them and I'm glad you all got some great information out of them as well. Today was the 9th and final day, at the end of today I am down to some white rice, lemonade, creamer, and mustard, so suffice to say it all got put to good use.
It was a journey for sure, but I hope it helps!
    Similar(ish) Casserole dish: amzn.to/44AO3oG
    Rice Cooker: amzn.to/3qWoZuD
    Today's Menu:
A sausage egg and cheese toasted breakfast sandwich
Burrito Bowl in a rice cooker: I rinsed 1/2 cup of rice, and added that to my mini rice cooker along with 1 cup of the taco soup broth, and 1 cup of the taco soup fillings. I let this cook and then I topped it with the small remainder of my sour cream and cheese
Taco Mac: I brought 1 cup of the taco soup broth (add water if needed to get to 1 cup) to a boil, I stirred in 1/2 a cup of macaroni and the rest of my taco soup fillings. I covered and simmered this for 8 to 10 minutes then I stirred in the rest of the cheese powder.
I also made a "use it up" dinner where I just dumped the rest of my peas, green beans, and turkey in the rice cooker with 1/2 cup of white rice and 1 cup of water. I let this cook and then I topped it with my warmed broccoli cheese soup. This was "okay" but I mostly just wanted to show that I could get 1 extra meal out of it, if needed. It might not be the best, but it'll do if you just needed to squeeze by.

I work at Dollar General and will need to pass off some of this information to some customers. A lot of people I see come in regularly are having to do the best they can and I think these ideas will help them! Also, DG has the 2 serving casserole dishes..or at least they do in my local stores (South Carolina). They're in with the ceramic cups and plates, usually on the kitchen tools aisle!

Any amount of sour cream is better than no sour cream 😂😂. You’re just amazing!! I can remember so clearly when I was a kid thinking we had nothing in the house to eat and my sweet little Mama would produce a four course meal in a half an hour out of literally nothing!! Niece told me the other day how impressed she was that I could dig thru a fridge and pantry at her parents house and scrounge a full filling meal for all 7 of us when she and mom thought there was nothing in the house. I didn’t even realize I had done that several times there. Now she wants me to teach her!

I have never looked at most of the Dollar Tree food. I am going to give it a look. I have a huge one near me. We are cooking for two more often. My parents and we share a home. I make a big dinner for everyone a couple of times a week, then we typically have the rest of the meals on our own. My parents like takeout a lot, so often I will just try to make a dinner that only feeds two. We end up with a lot of food waste. These ideas make it easier for me to think about cooking for two.

You done absolutely amazing making that amount of food last so long! I'm so thankful and grateful I came across your channel a few months or so ago and subscribed immediately! You have taught me so much and it's helped my family out tremendously! My husband, teenage son and I only have my husband's disability check as our only income and I found your channel at the perfect time! My husband had his lower left leg amputated back in December and now last month he had his lower right leg amputated as well. Also, back in December 2 weeks before Christmas we lost our home and farm that we'd only just gotten 2 years ago. I'm my husband's full-time and only caregiver so I don't have a lot of time or money to put into making meals for us. Honestly without your help there were times we wouldn't have been able to eat. You have been such a blessing to us and I can never thank you enough! We live in a very poor community that doesn't have resources to help us and not even one food pantry! There were times I didn't eat for days so I could make what little food we had for my son and husband. Now the fact that we can have 3 meals a day and even some snacks a couple times a week is so wonderful! I couldn't have done it without you! I spent many sleepless nights praying so hard for help and then one day I randomly came across a video of yours and our lives have changed so much for the better! Thank you from the bottom of my heart for what you do! You are my angel and will always have a special place in my heart! ❤❤❤

squash zucchini and corn sauteed together with cooked beans sounds like a great succotash to me! Season with garlic powder, paprika, salt and pepper, I used to eat something similar minus replacing squash with bell pepper when I was a student, using up the leftovers as a wrap for lunch the next day.

I personally have started stretching our dinner leftovers into other meals for the week for my husband and I. It cuts down on food waste and helps to keep the fridge cleaned out. My husband takes leftovers to work for lunch as well so that helps. With food being so expensive now sometimes you have to get creative just to cut the grocery bill. Love the videos and how creative you are with your recipes.

I'm divorced and retired early due to health issues. It's just me I'm cooking for and having to budget for. So many frugal channels are like $5 a day but they've got lots of people they're feeding. Feeding only one person is really hard, imo.Would you consider doing a video on how to stock a pantry for say $20 or even less. What would be your 'must have' ingredients?

The first couple of days it feels like there's not going to be enough food, by the third day I've got a good menu kind of going, but yeah, extending it beyond 7 days definitely had to change the rationalization of what can be used and when.

I put quotes around that cos its all apart of cooking... not everything will be as expected or the way you like it. I'm on disability (SSI w/ SNAP), but I'm glad that I have a little wiggle room that does allow me to get fresh veggies & fruit. I guess you mostly impressed me by sticking it out when you failed & figuring out ways to use what you had left. Honestly this time of the month (end of it) is when I mostly struggle cos I don't have whole lot left to choose from until the 4th (of every month). You need like a help line where we can reach out to you with what we have on hand and you can help us create a meal. I love to cook but I run out of ideas and I struggle when it’s a fridge/freezer clean out. Thank you for what you do!!!

Each month I spend about $50 at DT, about $40 at WD ( local grocery)
And about $30 on fresh veg at farmer's market.
I eat well and always have a varied variety of foods.
I do have staples I buy from DT that extends my budget!
So, I love these vjdeos i get a lot of great ideas here!

I never lived rual till last yr like you. And shopping is a real challenge your definitely correct. I have hispanic grocery store close with a dollar general. Most of the time i can get away with shopping at Hispanic store but i definitely go to dollar general when im looking for something you find at normal store like kroger or food lion etc.
Ive never had to deal with planning 1-2 weeks of grocery shopping having been in virginia beach last 13yrs because of having close access to everything you can want. Now in coalinga ca its pretty remote. Definitely a different style of living.

I just want to say that I appreciate what she is doing.. but in all reality? You can eat so much better. I live off of food stamps in the state of Florida. I get $281 a month in food stamps. I eat chili, stews, roast beef dinners, even steaks once a month. I have sweet potatoes, potatoes, carrots, peppers onions. I have tons of chicken and hamburger meat. I cook four big meals a week and there are always leftovers. I can make breakfast lunch and dinner on my food stamps. When you eat at Dollar general like that? With box macaroni and cheese? And canned Stews??? It is so not healthy. I do not buy snacks at all. I just buy my meats, fresh vegetables, some canned. And I buy a couple of fresh fruits. Sometimes Frozen. I just don't buy snacks that's where the money gets eaten up. I make homemade baked macaroni and cheese at least once a month.. I will never eat out of a box like that. I do appreciate what she is doing, but even if you just get food stamps like myself? I cannot complain at all with the food I have. Just the last few days of the month while I'm waiting for my food stamps as when I am low.. they're the days I just eat spaghetti and garlic bread or raisin beans. Or hot dogs with baked beans but that is the only time I eat even garbage like that. I need to make my own channel to show people how to live off of food stamps and can still eat healthy
