      8 ounces cream cheese, softened
      1 1/2 teaspoon vanilla, or to taste
      about 3 cups powdered sugar, or to taste

    Chef John... my experience with this recipe! 😂
    REVEAL: My neighbors wouldn't stop raving about this carrot cake that I made. I don't bake much, but this was a hit!
    CONFESSION: So a while back, I tried to invent a pecan praline with a twist. You know how good sweet pepper jelly is, right? And jalapeño candy and ice cream? So I thought I would make a jalapeño pecan praline. Since I'm not experienced as a candy maker, it just didn't turn out. So I had this big batch of very hard, peppery clumps of sugar with embedded pecans. It wasn't bad, just too hard and too sweet.
    SOLUTION: I put the failed pralines away and stored them for a few months. So when I later decided to make this carrot cake and began to buy the ingredients, I remembered that I already had pecans in the pralines, so I decided to use them in the recipe... I could also dissolve the sugar from the pralines for the recipe, too! It slipped my mind that there was also jalapeños in it.
    RESULT: So the carrot cake turned out to be really, really good, as my neighbors attest. It just has a certain spark. The flavor is just faint enough to be indefinable. Just a touch. So that's my secret ingredient. 😜

    Made it today because why the F not. I skipped the frosting because I wanted to see how the cake itself would taste. It came out FANTASTIC. Everyone at my dinner party loved it. Chef John this was a winner.

    I follow this recipe for the last 2 years now. It is simply unbelievable!! I do only 2 small changes (chemists we have little habits!): I don't use coconut oil (instead I put sunflower oil) and the walnuts I put them in the oven for like 4 minutes to bring out their sweetness. The frosting goes with reduced sugar (ladies are always on diet over here..)
    So many friends of mine asked for this recipe, it's like a tradition already! I pass it on and people are just having the most amazing time EVER. I love your recipes, John! And your blog

    Had my husband give this a go for my birthday. He was iffy on veggies in cake, but admits it's delciious. 10/10!
    I also had him add a couple tablespoons of Baily's Irish cream to your cream-cheese frosting.

      Bunnies and eggs are leftover trappings of the origional pegan fertility holiday.
      Religions used to change the meanings of holidays all the time to get people to convert because it's so much easier to change what a holiday is supposed to be about than get people to stop celebrating a holiday they enjoy.

    I've always topped my carrot cake with a yogurt buttercream frosting. Make a buttercream and substitute unflavored yogurt for the milk or cream. It's outstanding and the _slight_ tartness is a nice counterpoint of the sweet cake. People who have tasted it absolutely love it.

      @@lindapestridge3073 thank-you for trying my recipe. It started out as a "whoops" when I started to make frosting and realized that I had no milk or cream. After it went over so well with coworkers and friends, it became a staple that I have used over and over. I find that it becomes a refreshing substitute for frosted sugar cookies in the summertime.

    Just baked this cake and frosted! Taste perfect! I only use 1/4 of the sugars that Chef John used. It was perfect for our palates! Thank you very much Chef John! This is the best carrot cake I have eaten!

    Chef John this cake is so good I briefly considered making it for my birthday instead of chocolate! So gooooood!
    converted to metric weights:
    DRIES
    240 g flour
    1 t salt
    2 t baking powder
    1 t baking soda
    1/2 t ground ginger OR 1 piece candied ginger diced as a wet
    2 t cinnamon
    WETS
    400 g white sugar
    4 eggs
    210 g coconut oil
    55 g (1/4 c) melted butter
    350 g raw finely grated carrots (or more for a moister cake)
    8 oz finely crushed pineapple, drained
    60 g finely chopped pecans
    60 g finely chopped walnuts

    i made this last night! really good...soft with a deep flavour. loved it. i used olive oil instead of butter. the coconut oil gave it a wonderful smell while baking and added to the flavour.

    When I was a teenager in the 1970’s, I worked in a bakery that specialized in cakes. Ate so much carrot cake that I couldn’t eat it until the 1990’s!

    Looks good, never added pineapple before. Also, Easter was originally a Pagan holiday celebrating the reawakening of the Earth and the new life it brings. Since bunnies are so good and preproducing, they're a symbol of fertility. Eggs are a symbol of new life. That's why bunnies are an important part of Easter 🐇🐰🐇😚

    This is a wonderful recipe, and I have shared it with people I sing with at our church choir. In response to Chef John (what a great dude!!!) about rabbits and Easter, I am told that in the spring when a mother rabbit has little ones, she hides them in a hole that she has prepared. Three days later, the little rabbits emerge. Three days...same as the Resurrection of Christ at Easter.

    This is my all time favorite cake, my recipe is similar to this except I don't use pineapple or nuts, I use WAY more carrots, and add cardamom as a secret ingredient :)

    YES! I love a good carrot cake! This is a dessert we sometimes forget about but it always seems to get a good reaction any time of year, from Thanksgiving to Easter. It goes well with a lot of different menus. Carrot cake is an old-time classic and it's good to see it making a recent comeback! Thumbs up for this video!

    Oh, yes! I was thinking that this looks just like my recipe - until you got to the coconut and the pineapple. !!! That sounds soooo good! I have to try this. I would still add in raisins, though.     I bought 10 pounds of carrots the other day and my roommates chirped me for buying too much, but it was on sale and cheaper than buying 3 individual carrots
    Anyway I left them on the counter too long and most of them rotted but I didn't know until I made the batter
    So my roommate and I substituted the carrots for apples and made apple cake and I've got to say this was a delicious apple cake recipe
    So yeah, thank you for the apple cake recipe

    I made this (minus the nuts) and brought it to my mom's house today. Everyone went crazy for it. I'd never made a carrot cake before, but this recipe couldn't have been simpler and more foolproof. Even the candied carrots were wonderfully easy to make. Absolutely delicious. I think this is going to become my annual contribution to Mom's Easter brunch. Thanks, Chef John! My family did indeed enjoy this! :)

    this carrot cake is so good it has actually caused me to like carrot cake. Tried it over the holiday for dad's b-day & Christmas, very tasty.

    I just made this cake, because I had carrots from my own garden and wanted to use them for something 'special'. It turned out great! I used less sugar 1,5 cups instead of 2, still sweet enough and I wish I had roasted the Walnuts before crashing them just for that extra flavour. Next time.. 😄

    Changed this somewhat.. more spices and Raisins instead of pineapple then cooked it in an Instant pot. By far the best cake i've ever had. I've made different kinds of cakes and cheesecakes in the instant pot and this is by far the best. Something about this one seems to suit the instant pot perfectly (although NY style cheesecake is right up there).
