I appreciate these videos explaining gear and the technology behind them

I've been building pedals, always wanted to build a compressor! I love 1176 for everything, but LA2A is perfect for vocals! 3a is very nice for guitars!

12:11 he says it’s not a side chain high pass filter and proceeds to explain a side chain high pass filter?

guessing from his explanation that he means it’s not a sidechain hpf, but almost like boosting HF in sidechain maybe to make the HF trigger compression more?
either way its sidechain filtering for sure - maybe just not a traditional high pass.

it's not side chain high-pass filter because in LA2A the more you push it the higher the amount of compression. So when the emphasis is set higher, there's like a tilt or rather Niveau filter (commonly found on elysia compressors) for sensitivity centered around 800Hz to 1kHz. Less sensitive area getting lower amount of compression that could be simplified as lower amount of ratio compared to those high end that's super sensitive. It works a lot like "Frequency Dependent Ratio" function you can find on TDR Kotelnikov GE. Add the Inertia function on the plugin, you get a proper Optical Mastering style compressor mode on it that is sweet af. I think you can read about it in the manual.
