Preserving food by drying it is likely the oldest form of food preservation ever done. Reducing them to powders was probably a close second.
If kept moisture free, powdered foods can last for many years. It'd also be highly transportable and take up far less space. Another plus is keeping vermin out of your food supply (though you can't guarantee insects hatching - a problem that's hard to prevent.) If they do show up, sieve them out, give your powder an hour or so in a dry heat source again and re-bottle. (Or, consider them as McBuggets - extra protein!)
You can even do this with meat.

This is great info! A couple of tips…
If you don’t want to run your oven for a long time, hit up your local thrift stores. I bought a dehydrator with 6 regular trays, two mesh trays, and one “fruit leather” tray in practically perfect condition for $15.
Be careful using oils/fats if you’re going to try to store your powders longer than a few weeks. They can go rancid pretty quickly and spoil your dehydrated item.

I have gone totally to coring, chunking and pureeing my tomatoes and dehydrating the puree on fruit leather trays. The thin dry tomato crumbles up and stores in a much smaller space; I vacuum pack in jars. It is easy to add to soup, stews or chili.

If I may suggest, try slicing all of the fruits and veggies very thinly using a mandolin and don't juice them (unless you're planning to use the juices otherwise), then dehydrate the slices like you did the puree/pulp. You will yield far more powder and no need to pre cook the beets either. I hope this helps. Peace and love :-).

Instead of throwing away fruits, vegetables, bread, fish, meat … get a dehydrator. You can find them on Amazon, at Walmart, target etc. You will save so much money and you will eat so much healthier. I also dehydrate veggies so I can put it in the slow cooker/crock pot for when I don’t have time to cook. The food will last for years. ( also when you have extra kale (and spinach/chard/dark leafy greens) dehydrate it and crumble it up and keep adding it to a mason jar you keep in the pantry, then you have green powder for soups, stews, sauces, salads, dressings, baking.. pretty much anything. It doesn’t taste like anything but has tons of vitamins. I put it in my brownie batter )
