I don't know why a lot more people don't eat Kahawai. it makes beautiful Sashimi . is awesome crumbed in Panko and as you have just found out , it smokes up awesomely. Perhaps it's because it also makes very good bait.

I don't understand it either. It's the same in Australia most people think they are trash fish.
It makes great bait because of the oil in the flesh, the oil is what spreads out in the current and lets the other fish smell where the bait is. That is why mullet and trevelly are also great bait.

Being Māori myself we love how versatile Kahawai are and how much fun they are to catch I love how you enjoy them as much as we do they are not only bait fish but also a great food
Kingfish from the surf are definitely a thing! Pickup a one way bait sliding clip at a tackle shop. Cast out just a sinker then attach the clip to your mainline and your live bait is able to swim down your line out to sea. Definitely an effective way to target kingfish as they commonly patrol the beaches hunting for baitfish in the surf.
I agree, Kahawai is underrated both as a food source and as a sport fish.

Here in the Northeast of the US, a lot of fishermen consider Bluefish as trash fish. But, they are one of the most delicious fish to eat when you know how to prepare them. To me, there's no such thing as trash fish. Just trash cooks!

Okay at about 18:35 I think my knife skills are pretty good. Not chef worthy but pretty damn good for a home cook. Then Taku throws down the reverse butterfly on a fish and while I'm thinking "I didn't even know that was a thing." he does it legit fish prep style where you can read a magazine through the rib cage - no attached meat! Dude. I am not worthy. Time to practice and up my game. Good on you.

Kahawai (aka Australian Salmon) aren’t considered ‘trash fish’, they’re just not a highly prized fish because they’re abundant and easily caught. They do require some TLC when caught to maximise the flesh for taste (properly bled and stored on ice) which makes it a bit of a hassle for some fishermen. It just gets the reputation of ‘trash’ because Snapper (the other abundant species) is just as easy to catch, doesn’t require as much prep once caught (just dispatch and iced asap) and its fillets are just superior in almost every way (firmness, taste, etc). Kahawai is absolutely delightful when prepared properly though and they’re both awesome tasting fish regardless. And personally, I actually prefer Kahawai over Snapper for either Sashimi or other raw fish dishes.
Kingfish have been caught off the Surf, look up slide baiting. It’s basically special hardware that lets you send a live bait down a surfcasting line.
Bit harder to chop a fish up for bait then to bleed it don't you think and it's way easier to set a kahawai up to be smoked then to take big fillets off of a snapper bro lol think some idiots just think if there's a fish that the fulla on the beach can't catch then that's what they'd rather prefer don't know why people would rather have snapper it has hardly any taste most of the time can't really eat the big ones anyway because they're even worse kahawai is much nicer and actually has taste to sort of sweet too

Hey Taku, if you're interested in trying some more surf fishing, 90 Mile Beach is a great place to catch big snapper, especially at night (Be aware the swell often gets quite big so you have to pick your days). Plenty of Kahawai and Trevally too. Heaps of other great fishing spots around in the Far North as well if the west coast conditions aren't right.
Been catching Kahawai in Victoria/NSW for years (called Australian Salmon here and get pretty big compare to the NZ version) but never got around to eating them due to their reputation until a mate convinced me to give it a try. Light dusted and fried on the barbie, it was really really good! Definitely underrated. I think the secret is to bleed them immediately and cook them up asap.

You have cracked it, so you have. Gut and bleed, straight onto ice for no more than three hours then into a fridge to warm back up to fridge temperature before you cook it. Cut ALL of the dark red flesh off before you cook. Don't over cook it.
If you keep it more than 24 hours, it becomes too strong, but you can still use it in a fish pie, or fish and potato cakes.

I read an article a couple years ago telling the dangers of making a campfire with driftwood, due to the high concentration of salt on the wood. the problem is the when burned it produces a very toxic gas (carcinogenic)...well I can't live without a campfire on the beach, but i wouldn't smoke my fish with driftwood😱👀👀👀👀

Happy New Year! It's a weird time up here in the Northern Hemisphere, too. I'm in Seattle, and we are also experiencing the unusual circumstances.
Allot of big mullet in the shallows you might be seeing. Another good oily fish, very underrated most people say.

Generally in NZ fishermen eat lots of Kahawai and enjoy it we give it to friends and family who also love it. However Kahawai does not look good in the fish shop window because it spoils quickly and needs intensive care when caught commercial fishing does not suit bleeding and gill and gut then chill quick techniques on low value fish. As a result it doesn't feature as a commercial fish.
We call it the peoples fish it suits shore fishing techniques and spinning at river mouths popular where I live by the way you would be welcome here to freedom camp on my lifestyle block in Edgecumbe I can take you to some great fishing spots fresh and salt water (spectacular trout fishing near here).

Caught my first Kingi off the beach not far from where you were camped at Haumoana, just up the road at Te Awanga. Slide baiting with live baits is most popular to target them in the surf in Hawkes Bay. Normally find them close to river mouths.
We're blessed with so much good fishing in the Hawke's Bay, both salt and freshwater. Plus diving, when it's clean, which is rare 😂

Nice to see you repping the humble Kahawai / Aussie Salmon Taku! I always have enjoyed eating them tbh and used to hot smoke em mostly. Wasn't sure why everyone always called them catfood! They are fairly soft so maybe that is why - nothing a dry or wet brine can't sort out easily though haha.
We use those same weights you had there that lock into the sand, however we usually fish them in a paternoster rig so we can still feel the fish bite and set hooks properly etc. Might be worth a shot that way and see if you prefer it.

Love your content! And love smoked kahawai😊. I've heard drift wood smoke has some bad toxins ... maybe do a check on that for next time. Pōhutukawa is a good substitute for wood chips if you can't find Manuka. Then just de-bark and use the dried twigs . Happy fishing in nz!!

i was out over the weekend in the river mouth of foxton managed to catch 4 kahawai, still the best tasting fish to me in my opinion.
Bay Area in the northern summer and New Zealand in the southern summer. Doesn’t get any better than that!

As kiwi living in Brizzy, I, too, thought Kahawai was bait and snapper was overrated.
I prefer Tarakihi or deep sea perch to snapper.
If you have the chance to catch blue or pink mao mao, they are awesome in shashimi as well. Keep up the great work.

Because of you and your careful instruction, I enjoy filleting fish! The thing I love about saltwater fishing is that you can catch your own baits within a few yards in the water .
Next time use a smaller rod and reel and try to catch some smaller live bait , not much can beat natural live bait fish ..
plus you don’t get skunk since you would probably catch a lot of smaller fish .

Ive fished alot in those beaches and i would of come and meet you if i knew you were here. I also caught a 15kg kingi at Mohaka north of Napier just after Xmas and a couple at whirinaki.
I have to try smoking it. I've made ceviche, fish cakes, crumbed, battered, baked but when there are so many around that you also end up feeding them to the chooks you know there must be another way to prepare them. Thanks.

Welcome to Hawke's Bay I've caught plenty of Kahawai (and other species) from the beach there between Haumoana and TeAwanga. I live 20 minutes away from there.
There are plenty of Lemonfish (spotted smooth hound) which are a shellfish eating shark. Use raw prawns from the supermarket (or those crabs like the one you caught) for bait. They are excellent eating as long as you trunk the fish straight after capture.
And yes, plenty of kingfish caught from that beach :)

Travel further north Taki around gisborne and right around the east cape! Beautiful.. Then head over Mt manganui and to Raglan on the west coast! Beautiful and great fishing . Btw love your content! Very underrated.
Cool vid bro, when smoking the kahawai if you cut head behind gill plate to keep wings on and leave rib cage and backbone in the meat will come out so much sweeter, also if you use salt and brown sugar instead of white it’ll taste better too. Keep up the good content bro.
